Air fryer potato pies with mushrooms and cheese

An autumn comfort food favourite — tender potato pies filled with mushrooms, fried onions and melted cheese. A little nutmeg makes the potato dough even more delicious.

Ingredients:
• 500g potatoes, peeled
• 80–100g plain flour, plus extra for shaping
• 200g mushrooms, finely chopped
• 1 onion, finely chopped
• 80g cheddar or firm mozzarella, cut into small pieces
• A pinch of ground nutmeg
• Salt and black pepper
• A little oil for frying and spraying

Boil the potatoes until tender. Drain thoroughly, mash without adding milk or butter, and leave to cool.

Meanwhile, fry the onion and mushrooms in a little oil until softened and any excess moisture has evaporated. Season with salt and pepper.

Mix the mashed potato with the nutmeg, salt and flour, adding just enough flour to make a soft dough.

With lightly floured hands, flatten a portion of dough. Add a spoonful of the mushroom and onion filling and a piece of cheese. Fold the dough around the filling and gently shape into a small pie.

Arrange in the air fryer in a single layer, leaving space between them. Spray lightly with oil.

Air fry at 180°C for around 15–20 minutes, until lightly golden. Turn carefully halfway through once the pies are firm enough to lift.

Tender potato, savoury mushrooms and melted cheese — autumn on a plate.

Bon appétit!

Cinnamon sugar bread crisps

Don’t throw away those bread crusts — turn them into something ridiculously good with your coffee.

Bread crusts, sugar and cinnamon. That’s basically all you need.

If the bread is a little dry, quickly dip the crusts in water. If it’s fresh and soft, you can skip this step.

Mix sugar with plenty of cinnamon, then coat each strip of bread in the mixture. Roll into little spirals and place on a baking tray or straight into your air fryer.

Air fryer: 180°C for around 6–8 minutes.
Oven: 190°C for around 10–15 minutes.

Cook until golden, crisp and beautifully caramelised.

Let them cool for a few minutes — they’ll become even crunchier as they cool.

And that’s it. Your crispy cinnamon treats for coffee are ready.

Caramelised apple puff pastry
Apple season is here — and the apples that have just fallen from the tree somehow always taste the best.

For this recipe, keep the apples in big halves. We don’t want apple sauce — we want beautiful, soft, caramelised pieces of apple sitting on crisp, buttery puff pastry.

Ingredients:

• Apples
• 1 sheet ready-rolled puff pastry
• A little lemon juice
• Demerara or light brown sugar
• Ground cinnamon
• Small k**b of butter
• 1 egg, optional
• Vanilla ice cream, to serve

Peel the apples, cut them in half and remove the cores.

Melt the butter in a frying pan and add the sugar. Sprinkle the apples with lemon juice, place them in the pan and add another little squeeze of lemon over the top. Add a touch of cinnamon.

Cover and cook briefly until the apples just begin to soften but still hold their shape.

Roll out the puff pastry and cut into circles. Arrange the apple halves on top.

Brush the exposed pastry with beaten egg — or, even better, use a little of that gorgeous buttery apple caramel left in the pan. Finish with another sprinkle of cinnamon.

Bake at 200°C conventional / 180°C fan for around 18–25 minutes, until the pastry is puffed and beautifully golden.

Serve while still warm with a scoop of vanilla ice cream melting over the top.

Crispy pastry, warm caramelised apple, cinnamon and cold vanilla ice cream. That’s what apple season is for.

Creamy roasted aubergine & tomato pasta
One aubergine, two juicy tomatoes and a whole head of garlic — and you’ve got an incredibly creamy pasta sauce without even using a blender.

Cook everything together in a frying pan under a lid until completely soft. Remove the skins, then mash the vegetables and sweet roasted garlic directly in the same pan.

Add a splash of cream, season with salt and plenty of black pepper, then toss through your cooked pasta.

Serve immediately with a generous sprinkle of Parmesan.

Simple ingredients, one pan and the creamiest, most comforting pasta.

Bon appétit!

Crispy stuffed potato patties with mushrooms & cheese

Easy air fryer potato recipe with a crispy golden outside, soft potato inside and a juicy mushroom and melted cheese filling in the middle.

No frying needed — lightly brush them with oil and let the air fryer do the rest.

Ingredients — makes 5–6:

For the potato mixture:

• 500g potatoes
• 80–100g potato starch
• Salt, to taste
• Pinch of garlic granules

For the filling:

• Mushrooms
• 1 small onion
• A little grated hard cheese
• Salt and black pepper
• A little oil

Peel the potatoes and boil in salted water until tender. Drain really well and mash until completely smooth. Don’t add milk or butter.

Let the potatoes cool slightly, then add the garlic and 80g potato starch. Mix into a soft potato dough, adding the remaining starch only if needed.

Finely chop the mushrooms and onion and fry until golden and all the excess moisture has evaporated. Season with salt and pepper and leave to cool.

With damp hands, take a portion of the potato mixture and flatten it. Add mushrooms and a little cheese to the centre, close the filling inside and shape into a thick patty.

Lightly brush each one with oil.

Air fry at 190°C for 14–18 minutes, carefully turning after 8–10 minutes. For an extra crispy golden finish, give them another 2–3 minutes.

Crispy outside, soft inside and that melted cheesy mushroom centre — proper comfort food from the air fryer.

Fluffy flourless yoghurt cake

Soft, light and made with just a few simple ingredients. This isn’t quite a traditional cake — the texture is closer to a delicate yoghurt soufflé or baked yoghurt pudding. It rises beautifully in the oven and settles slightly as it cools, which is completely normal.

Ingredients:

• 4 eggs, at room temperature
• 350g thick natural yoghurt
• 3 tbsp sugar
• 3 level tbsp cornflour, approximately 25–30g
• 1 tsp baking powder
• Icing sugar, to decorate

Method:

1. Combine the yoghurt, sugar, cornflour and baking powder in a large bowl.
2. Add the eggs and mix thoroughly with a whisk until smooth. Avoid whisking too vigorously.
3. Pour the mixture into a baking tin lined with baking parchment.
4. Bake at 180°C for 35–40 minutes, until the top is lightly golden and the centre is set.
5. Allow the cake to cool completely. It will sink a little as it cools — that is exactly what should happen.

Dust with icing sugar before serving.
