Couple of dishes from last night that I was rather happy with.

Pan Fried Halibut, Purple Sprouting Broccoli, Crayfish, Wild Garlic, Cornichons, Samphire, Onion Cream Sauce finished with Rainbow Trout Caviar. (A “heavily influenced” by and .restaurant dish 😂)

Pork Fillet, Confit Pork Belly, Charred Sweetheart Cabbage, Crispy Cabbage Leaves, Roasted Apple Puree, Roasted Garlic Mashed Potato, Pork & Mustard Seed Sauce.

Wow! What an incredible dining experience!

It’s been brilliant to watch .restaurant grow over these last few years, and today’s meal felt like the culmination of a lot of hard work from an incredibly talented team.

The food that , Mike and the rest of the crew are putting out is some of the best I’ve ever had. The consistency from one course to the next summed up exactly why they’ve rightly earned their first star!

Also, special mention to the FOH team who are knowledgeable, consistent but relaxed, warm and welcoming. They also dealt with my terrible jokes as well as does, and that’s a skill in its own right!

I really cannot wait to come back, drink far too many Apiary Old Fashioned’s and eat some truly magnificent food!

P.S. Some great tunes while eating too. I’m a sucker for acoustic versions of my favourite rock tracks, so I was very much in my element!

Tomorrow, after two long years, I get to go back to my first ever experience at .restaurant.

To say my first trip there was inspirational would be an understatement. Those close to me know the plans I have/had, but illness over the last 12 months stopped all that.

Fingers crossed I can finally get over whatever it is that’s going on with me in the next few months and start some new plans.

But, suffice to say, it all started with this meal.

Anyway, I digress. The Boat is outstanding. And now they have rightly earned a star too! Only the second restaurant in Staffordshire to earn one! Amazing!

Tomorrow cannot come soon enough! Great food, great drinks, great company (). What more could you want?

Mackerel, Semi Dehydrated Tomatoes, Pickled Shallot, Horseradish Cream.

Ended up doing four because I can’t help myself…

Panko Coated Soft Boiled Egg, Asparagus, Garlic Cream split with Parsley Oil

Tandoori Monkfish, Thai Green Curry Sauce, Mooli, Pickled Radish, Furikake, Coriander Oil (which annoyingly glubbed out the bottle, so far too much on the plate…)

Fillet Steak, Glazed Jacob’s Ladder, Braised Beef Shin & Stilton Bon Bon (with Bone Marrow Mayonnaise & Tarragon), Beef Fat Turnip, Roasted Garlic Puree, Pickled Shallot, Balsamic Vinegar Gel, Borderlaise Sauce.

Roasted Pineapple, Pink Peppercorn Caramel, Spiced Rum and Banana Ice Cream.

A lot of work for a solo home cook, but worth it!

Got to use the for probably the last time this year (weather depending… we’ll see…) for the monkfish, fillet and Jacob’s ladder. Nothing better for proper barbecue flavours!

Also, massive thanks to for the advice on the Jacob’s ladder. Worked a treat this time! Much appreciated, chef!

Focaccia with Garlic Butter, Fermented Garlic & Chilli Honey and Balsamic & Olive Dipping Sauce

What an incredible meal and experience my brother and I had at for lunch today.

From being greeted, albeit unintentionally, by the man himself at the entrance, we were treated fantastically by the entire front of house team.

Your front of house team is your first experience of your time at a restaurant, so having such a great team start your time there is really important. What a fantastic team.

The food… Just wow!

Having not yet been lucky enough to make it to any of the other restaurants in the group, I couldn’t pass up the chance to eat at Ugly Butterfly 2.0 on our family holiday.

Now, knowing what I know, I’d consider the 5 hour drive for the food alone!

Every single dish was truly outstanding, but the lamb course has officially taken the top spot for the best plate of food I have been lucky enough to eat.

If you’re ever in Newquay, you’d be a fool not to experience this fantastic restaurant.
