Had a first attempt at an Adam Byatt recipe form the Trinity 1 ⭐️ Michelin cookbook.

My effort certainly was obviously not as pretty or well made (and I also used lemon verbena leaves as I forgot I needed some and used them all for the oil). Also, the mackerel I can get in land locked Tamworth certainly isn’t ideal.

However, it tasted amazing!

Was part of a meal I cooked whilst solo parenting, so I’ll take it.

So**ed and Torched Mackerel, Ajo Blanco, Tarragon Oil.

Not posted any of my food in a while, so, in no particular order, have a photo bomb!

Beetroot & Whipped Feta Croustade (Ugly Butterfly inspired)

Scallops, Pork Belly, Pickled Apple, Caramelised Apple Puree, Black Pudding Crumb

Chuck Eye Steak, Jacob’s Ladder with Blue Cheese Crumb, Pickled Shallot, Beef Fat Confit Turnip, Roasted Garlic Aioli, Green Peppercorn Sauce

Marmite & Short Rib Fat Brioche

Cod with Warm Tartare Sauce

Duck, Caramelised Red Chicory, Celeriac Puree, Red W**e & Cherry Jus

Scallops, Fennel Remoulade, Cumin Air

The Bear inspired Cola Braised Short Rib with Risotto

Miso Mushroom, Pickled Shallot and Wild Garlic Croustade

Korean Fried Chicken Bites (Liam Dillon inspired but don’t have the caviar budget! 😂)

Salmon, Braised Fennel, Puffed Wild Rice, Thai Curry

Pork Fillet, Pork Belly, Purple Sprouting Broccoli, Red W**e and Mustard Seed Jus

Braised Ox Tongue Skewer, Puffed Wild Rice, Pork Air Bag, Garlic & Onion Mayonnaise

Another truly unforgettable experience at Ugly Butterfly, but this time with Laura Fallows for our wedding anniversary.

Was lucky enough to come the same time last year and have an amazing time, but the standard has somehow gone up even more!

Exemplary food, amazing FOH team and just a wonderful way to spend a few (child free!!!) hours with my better half.

See you next year!
