This is one of Mr Higsons favourites at the moment.
We're calling them pineapple flapjacks 🤷🏼‍♀️🤣

This came about when Mr Higson bought a huge bag of dried pineapple for a "healthy snack" and then after trying one found he didn't like them 🤦🏼‍♀️

So we got creative!

• 300g porridge oats
• 100g dried chopped pineapple
• 100g of nuts or seeds (in there we have walnuts)
• 150g of dried fruit (we used sultanas, but anything like that would work)
• 200g butter
• 50g golden syrup
• 1tsp of vanilla
• 397g tin of condensed milk

Preheat your oven to 180°c and line a baking tin with parchment paper.

Add porridge oats, pineapple, nuts and dried fruit to a large bowl.

In a pan on a low heat add the butter, syrup, vanilla and condensed milk and stir until everything is warm and melted together.

Add your wet ingredients to your dry and mix until they become one 🙏

Tip into your lined baking tin and bake for about 40 minutes, until the top is golden brown.

Leave to cool completely in the tin, and then pop it in the fridge for an hour before cutting it up and enjoying 👌

🍑 🫐 Peach and blueberry cake 🫐 🍑

• 125g of butter
• 200g of caster sugar
• A splash of vanilla
• 3 eggs (I used medium)
• 200g of self raising flour
• 125ml of yogurt (I used 0% fat natural)
• 1 can of peaches (fresh would work too, but I had a tin in the cupboard)
• A small tub of blueberries (I used fresh but you can use frozen)
• 1 tsp of baking powder
• Icing sugar to decorate

Preheat your oven to 180°c and line a couple of cake tins with parchment paper.

In a stand mixer (or by hand if you don't have one) beat the butter and sugar together.

Add the eggs and vanilla and then beat again.

Add the flour, baking powder and the yogurt and beat again until all combined and then pour into two sandwich tins (or one big one but you'll have to bake it for longer)

Open your peaches and drain the juice/syrup into a bowl and keep aside for later.
Decorate the top of the cake with the peaches and blueberries.

Bake for 30 - 40 minutes, until the cake is golden brown on top.

Once the cake is done, take it out of the oven and leave it to cool completely in a tin.
Once cooled, run a butter knife round the outside of the cake to loosen it, and then tip it out and remove the parchment paper from the bottom.

In a bowl, add a couple spoons of the peach juice or syrup and mix it with a couple of spoons of icing sugar until you have a nice thick icing that you can just about drizzle.

Drizzle, slice, and enjoy 😋

It's a granola bar.
You can put almost anything into a granola bar!
Well, I dug through the baking cupboard to see what we had, and behold, the pineapple, walnut and sultana granola bar! 🤷🤣
I didn't know how this was going to turn out, but it's a hit with Mr Higson, so I'll take that! 👌

It's that time of year again! When we all have tubs around the house from all the chocolates 😋
They are perfect for storing cakes and biscuits in though!
