Sunt bucătar și îmi plac cuțitele. Am învățat că oțelul bun pentru lame nu e neapărat cel mai dur, ci cel mai fiabil. Oțelul pur tinde să fie casant si chiar dacă e foarte dur si rezistent, riscă să se spargă oricând, mai ales în mâini nepricepute. De aceea se adaugă o cantitate de materiale străine (sau impurități), care transformă totul într-o lamă elastică, maleabilă și rezistentă. Astăzi, în ziua asta decisivă pentru Germania, le doresc oamenilor de acolo să voteze pentru același oțel care i-a adus unde sunt acum, cu toate "impuritățile" care i-au făcut mai puternici. Frumusețe găsești oriunde, chiar și în Frankfurt.

Somehow, I think this is an overpacked dish, so in a self-irony moment I baptized it "back to the roots": celery steak, beetroot fondant, parsnip hay, roasted cauliflower puree and horseradish cream. Oh, and some green salad with spinach, zucchini shaves, mango and fennel. Oh, and some saperavi and chocolate sauce. Oh, and....

Există o legătură strânsă între români și mâncarea lor. Am fost un neam năpăstuit, forțat să mănânce prost și pe repezeală. Porumbul, intrat pe furiș la noi, ne-a salvat de la foame în vremuri în care tot grâul pleca tribut. Ni s-a dus pe nedrept renumele de mămăligari, și iată că totuși bucătăria românească începe încet să își croiască un drum peste granițe. De ziua României, am renunțat la fasole și ciolan și am ales să fac banala mămăligă cu brânză de burduf, smântână afumată, hribi și maioneză de ardei copt. Și puțin ulei de leuștean, că aici la noi e cel mai folosit. La mulți ani, România!
