Have to say (don't usually promote products/services) but for a quick fix Lidl do a 3pk of basic Margarita pizzas which have a lovely thin n crispy base when cooked. Added red onion, kefalonian graviera grated cheese, marinated anchovies , some olive slices and ripped basil leaves at the last minute......delightfully tasty quick fix 😋😁

Danish Blue Carbonara.
I hate waste so always like to use up open things or when the BB is coming up or up.
Well smoked bacon lardons were begging to be used so fried off with sliced mushrooms,crushed fresh garlic,thyme, chilli flakes, fresh cream and then another use up of danish blue cheese along with some parmesean shavings, fresh parsley then stirred in. Served with wholemeal spaghetti.....certainly hit the spot with the taste buds😋

Last nights sea food risotto. King prawns,plump juicy mussels and char grilled octopus. In an ouzo,fennel and tomato reduction. Parmesean shavings stirred in at the end to give a delighful creamy texture. Dusted with sweet paprika to finish.

Been taking a notion for salmon recently. Salmon was pan fried in olive oil and butter with turmeric,lemon rock salt to give a lovely crispy skin. Served on a bed of wholegrain mustard mash and sweet garden peas.

Sometimes it's great to batch cook. The initial mix of onion,garlic beef mince ,chopped tomatoes and seasoning got split them individually made into a chilli con carne, served with basmati rice and corn tacos. Lasagne then made for tomorrow night...think my current house guests are enjoying the cuisine on offer......best bit is I've got them doing the dishes 😂😂

Tonight's quick fix dinner was pan fried salmon in olive oil and butter with a spice mix coating. Curried noodles and sweet petit poi to add that pop of sweetness. Topped with a crispy piece of salmon skin😋

Nice healthy lunch.....Greek smoked trout salad.
Smoked Greek trout on a bed of lettuce,rocket,cherry tomatoes,crisp red peppers,cucumber ribbons,creamy advocado and red onion, a lemon,balsamic and olive oil dressing and topped with masango red sushi caviar to finish!😋
