Have you baked with malt flour before? I spent the evening trying out my bread recipe - conclusion? I’ll make it in pans again and not rolls - they spread on me - taste great, but they look a little - well flat frankly!
Anyway! Hello to all the new followers who have shown up - check in tomorrow for my usual Sunday tip - a simple but handy one - and tell me what you’re planning - I don’t know if I can have that wine - love Prada! What a queen Meryl is - and Anne too!

This went down a treat yesterday evening - I’m not sure which I prefer more - maybe the burrito? Both are lovely. I used some tasty tomato relish I had in the cupboard and those delicious gluten free nachos - previously gifted to me - I can’t keep them in the house - they’re devoured as soon as they arrive in the door!
My point is use what you have in your kitchen - if this is for a college student just tomato putter, a bit of water and some bbq sauce will do, one of mine wanted hoisin in it - use what you’ve got!
Let me know if you’d consider this a dinner - or just a snack! Happy Friday again - that’s just mad. How is another week gone!

Have you made any of these before? Let me know below. They are so good, and involve an initial outlay financially, but they are so worth it!
I use the grade B vanilla pods from Dublin Spice Company - not an ad - I paid for them in full. I’ve also shared how to make my other two favourite extracts. Which will you try?

Some days are just full of serendipity - today was one of those. I love to give a shout out to local businesses and today I visited some - I paid in full for everything I bought.
If you haven’t paid a visit to Kildare recently, do! So many lovely spots to visit - I’ve tagged all below - tell me which ones you have visited, and what I missed! Shoutout to the lovely retail staff we met, especially Kirsty and Janice in 7 for all Mankind - truly patient and lovely! 💞

I’m not sure if my family prefers these to my signature recipe - and I don’t know how I feel about that! I made 14 from this mix, and each one has 7g of protein and 1.6g of fibre - so they’re good and filling.
They freeze perfectly, and are great for breakfast, lunch or that hangry 4pm after school spot. I used a fabulous spelt flour from and some bog standard vanilla protein shake that Finn has in the house. Details pinned below. Now what o want to know is what’s your favourite topping? And when do you eat pancakes?

A late night treat. I made this to give away and it didn’t make it - well some of it did! So simple , it took seven minutes to put together and half an hour in the oven. It needs to cool and doesn’t need any extras to make it perfect - it’s like a smushy jaffa cake really. That coulis from is totally delicious - I could drink it!
Sleep well - it’s still August - just!

A rather simple tip today for you - give it a try - honestly a game changer!
I love .ie and am a brand ambassador but I didn’t realise this is made by them until I checked the packet - it’s not an ad - I’d have shared anyway!
You may not see me for several days - my ironing pile has reached mammoth proportions - and I just can’t put the sheets away without ironing them! Wish me luck! Do you iron all? Or nothing? And have you discovered this trick for buttercream before? Let me know in the comments below.

There was a hint of cool in the air today so I made soup. I was gifted some amazing stock by and I wanted to use it in it - the flavour is next level. I’ve used the beef stock before when I made Paddy’s Steak gravy from the book - today I used a chicken and a veg one - I also used just what you see on screen - so no ingredients list for this. I used about 250g of chicken thighs - and you can add a little cream at the end if you’d like to - it doesn’t need it. This freezes well and makes about eight portions.
A simple Sunday tip tomorrow - a baking one that I happened upon accidentally - it’s great!

I will never not love this one - I often make this as scones but the pan of bread just hits different. Key to this however is that you need to let it cool fully before cutting it. It freezes beautifully - slice it and separate with parchment paper before putting into a bag or tub. Delicious. Happy Friday.
