Blueberry Tart.

Made every element from scratch; pastry & Blueberry Jam. No major skills needed; just pressing of buttons!

But I am chuffed to do the lattice/layering of the pastry and looks beautiful… for a family birthday celebration.

If you know me, I’m a very minimal baker; as long as it taste good, I don’t do decorations or anything fancy. Rather, I don’t know how! 😂
So this is a tiny win for me. ☺️

It’s been a while since last post… with life… and all that comes with it; and loss. Grieve takes on so many faces. I am thankful in all that, for how God has been good to us. Each day is a gift we do not take for granted.

Very thankful for my better half; who supports me in so many ways. He cooks on a regular basis, THANKS TO Thermomix!

Thai Chicken balls

Made this as part of Lunar New Year dinner where you drop them into broths and see them rise to the top as they cook.

They have a real distinct Thai flavour which I love! I imagine they’ll be lovely shaped into kebab sticks when the BBQ season greets us! 😎

Some tips:
I just used chicken fillets/chicken thigh and give it a quick 5 seconds, at Speed 5 to mince it. A second or two longer if needed.

I used Yellow curry paste as ran out of Red Curry Paste and it tastes great!

I’m not much of a baker, and when I do bake, it comes with no frills…a dusting of icing is as far as I go.

But when an avid baker friend of mine wants to test out the Thermomix and see how it will perform… the Thermomix doesn’t fail!

Blueberry Coffee Cake

It’s light and moist. Flavourful especially with warming spices like nutmeg, cinnamon and ginger; very subtle yet delicious! The streusel is a bit too sweet for my liking so I’ll be reducing the sugar next time!

I was looking for coffee in the ingredient but I learn now that it’s called coffee cake because it’s traditionally eaten with a cup of Coffee! Always learning something new!

Grieving

A word that compounds so much … of emotions, sentiments, etc. Sometimes conflicting emotions, sometimes a rollercoaster of them and often you find it (grieving) in the background of your everyday. It is extra difficult when you’re miles away.

It’s there in the mundane, it’s there in the big life events of others around you.

It’s allowing yourself to grieve; AND equally, allowing yourself to live in the NOW; to move on; a step at a time.

And here, in memory of my late brother who just passed a few weeks ago, a recipe handed down from my late mom.
The Ngoh Hiang is a feature at every Chinese New Year dinner in our family. I miss my mom…and now will miss my brother. But am reminded and comforted to know they’re in a much better place; free from pain and any suffering.

Because of the Lord’s great love we are not consumed, for his compassions never fail.
They are new every morning; great is your faithfulness.
