Sourdough goodies:
Fougas
Pretzels
Pretzel bagels
Cinamon knots
Chocolate rolls

Salads, and dips:
Humus
Feta pepper cream
Matbucha
Tchina
Asparagus strawberry avocado salad

It's a use all the leftover flour bread, so it has some rye, whole wheat,  Manitoba, and king wheat.  I added a lil too ...

It's a use all the leftover flour bread, so it has some rye, whole wheat, Manitoba, and king wheat. I added a lil too much water so I put chia seeds to handle the dough easier. Came out wonderfully.

Another beautiful bread, I finally get used to my new oven! This time I did a bread for our daily life that's good for toasts and sandwiches. It's 20% khamut, 20% rye 20% whole wheat and rest is caputo Manitoba. And a handful of chia seeds. This time, I put the seeds while laminating the dough, which I usually don't anymore, but I have some time to play 😀

It is just perfect! Also so so delicious. It's 40% whole grain, 20% rye, and the rest is caputo Manitoba flour. It also has a handful of chia seeds, as I felt I just put in a bit too much water (ooops). I'm truely proud of this one.

So my perfect 50% whole wheat bread sliced.Formula:50%   caputo flour 50% whole wheat80% water 25 %   30 min fermentolys...

So my perfect 50% whole wheat bread sliced.

Formula:

50% caputo flour
50% whole wheat
80% water
25 %

30 min fermentolysis ( mixed the water with the levain and ad all the flour, knead and let it rest for 30min)
Knead the salt.
1 coil fold
1 lamination
1 coil fold
Bulk phase until reached 30 % rise. All night.
I shaped directly without pre shape. 15 min rest.
Proof on the counter now for about 2 hours.

Baked straight from the fridge.
235°C with steam for 20 min. 215 without steam for an other 25-30 min.

And a perfect sourdough bread for Christmas dinner. Love love ❤️ this bread!
