Instant Mavinakayi Saaru | Raw Mango Soup/Rasam | Perfect Summer Recipe | ಮಾವಿನಕಾಯಿ ಸಾರು

Ingredients:
1 big raw mango
Curry leaves
Water 2 cups
Turmeric powder 1/3 tbsp
Salt 1/2 tbsp
Cooked dal 1/2 cup
Jaggery 2 tbsp
Coriander leaves

Recipe:
Cook for 2 whistles in pressure cooker
Take out steamed mango
Peel skin of mango
Remove pulp from mango
Smash pulp to make it smooth and consistent
Heat vessel
Add mango pulp
Curry leaves
3/4 glass water
1/3 tbsp turmeric powder
1/2 tbsp salt
Mix well
Stir & cook for 2 minutes
Add 1/2 cup cooked dal
Add more water for consistency
Add 2 tbsp jaggery
Mix well till jaggery melts
Add coriander leaves
Add tempring
Mavinakayi saaru ready!

ಮಾವಿನ ಮಿಡಿ ಉಪ್ಪಿನಕಾಯಿ । ಮಿಡಿಗಾಯಿ । Appemidi uppinakayi Tender Mango Pickle Mavina Midigai uppinakayi

Ingredients:
Midigayi 1 kg
Salt 200 gms
Mustard powder 120 gms
Kashmiri Laal mirch powder 100 gms

Recipe:
Wash midigayi cleanly
Wipe clean with cloth
Add to vessel
Add salt
Mix well
Close lid
Keep aside for 1 week
Keep mixing everyday
Midigayi becomes soft
It leaves water
Sieve this water into another vessel
Add mustard powder
Add Kashmiri Laal mirch powder
Mix well
It becomes perfect thick consistency
Add midigayi
Mix well
Transfer to jar
Store it for many days

North Karnataka Special Jolada Nucchu | ಉತ್ತರ ಕರ್ನಾಟಕ ವಿಶೇಷ ಜೋಳದ ನುಚ್ಚು | Jolada Ambali | ಜೋಳದ ಅಂಬಲಿ

Ingredients:
Jowar 1 cup
Oil 3-4 tbsp
Cumin seeds 1 tbsp
Curry leaves
Hing 1/4 tbsp
Ginger, green chilly paste 1 tbsp
Butter milk 3 cups
Salt 1/2 tbsp or as per taste

Recipe:
Take jowar
Wash & clean
Grind into Nutchu(not very smooth)
Sieve
Wash few times
Heat oil in a pressure cooker
Add cumin seeds
Add curry leaves
Add hing
Add ginger, green chilly paste
Saute
Add washed Nutchu
Mix well
Add buttermilk
Mix well
Add salt
Add water for consistency
Mix well
Cook for 3-4 whistles
Jolada Nutchu (AMBLI) ready
Serve hot with ghee & pickle for great taste!

ಸಜ್ಜೆ ಹಿಟ್ಟು ಉತ್ತಪ್ಪ ಮಾಡುವ ವಿಧಾನ | Gluten Free Millet Breakfast in 10 minutes

Ingredients:
Sajje Hittu 1 cup
Besan 1/4 cup
Rava 1/4 cup
Salt 1/4 tbsp or as per taste
Cumin seeds 1/4 tbsp
Onion 1 small (chopped in small pieces)
Capsicum 1 small (chopped in small pieces)
Carrot 1 (grated)
Green chillies 2 (chopped)
Coriander leaves
Curd 1/2 cup
Oil 3 tbsp

Recipe:
Take sajje Hittu flour in vessel
Add besan flour
Add rava
Add salt
Add cumin seeds
Add onion pieces
Add capsicum pieces
Add grated carrot
Add green chillies pieces
Add coriander leaves
Add curd
Mix well
Add little water
Mix well
Keep adding more water for batter consistency
Mix well till batter is ready
Heat pan
Pour little batter and spread
Add few drops oil over Uthapa
Close lid and cook for few minutes
Cook on both sides
Sajje Hittu Uthapa ready!
Server hot with pickle and chutney for great taste

North Karnataka Special | GROUNDNUT CHUTNEY RECIPE
ಉತ್ತರ ಕರ್ನಾಟಕ ವಿಶೇಷ | ಶೇಂಗಾ ಹಿಂಡಿ ರೆಸಿಪಿ



Ingredients:
Peanuts 1 cup(250 gms)
Red chilli powder 1 tbsp
Salt as per taste

Recipe:
Fry peanuts in vessel
Fry on low flame
Stir & fry
After peanuts are fried, turn off flame
Let it cool
Peel skin of peanuts
Add peanuts to the grinding jar
Add Red chilli powder
Add salt
Grind few times in very short intervals
Peanuts powder should not be very smooth
GROUNDNUT CHUTNEY ready!
You can store it and use it for up to 2 months

Majjige Huli Recipe in Kannada - ಬೂದ ಕುಂಬಳ ಹುಳಿ | boodugumbala Majjige huli

#1. Majjige Huli Recipe:

Ingredients:
ash gourd 1/2 kg
Water for cooking
Oil 3 tbsp
Fenugreek seeds 1/3 tbsp
Mustard seeds 1/3 tbsp
Cumin seeds 1/3 tbsp
Dry red chilli 1
Hing
Turmeric powder 1/4 tbsp
Salt 1/2 tbsp
(For majjige huli masala)
Channa dal 1/2 cup
Ginger 1 small piece
Grated coconut 1/3 cup
Coriander leaves 1/3 cup
Mustard seeds 1/2 tbsp
Butter milk 1/2 litre

Recipe:
Take ash gourd
Remove seeds
Peel skin of ash gourd
Soak in water
Cut ash gourd into medium pieces
Wash with water
Heat oil in a vessel
Add Fenugreek seeds
Add mustard seeds
Add cumin seeds
Cut dry red chilli into two pieces
Add dry red chilli pieces
Add a pinch of hing
Add washed ash gourd pieces
Mix well
Add little water
Close lid & cook for few minutes
(For majjige huli masala)
Add channa dal to the grinding jar (channa dal soaked for 2 hours)
Add mustard seeds
Add ginger
Add grated coconut
Add coriander leaves
Grind into smooth paste
Add grinded masala to cooked ash gourd
Add turmeric powder
Add salt
Add little water
Mix well
Close lid & cook for few minutes
Add buttermilk
Mix well
Cook till it starts boiling
Turn off flame
Add coriander leaves
Majjige Huli ready!
Close lid

#2 ash gourd skin Chutney

Ingredients:
Oil 3 tbsp
Fenugreek seeds 1/3 tbsp
Pinch of hing
ash gourd skin
Green chillies 2
Turmeric powder 1/4 tbsp
Grated coconut 1/3 cup
Coriander leaves 1/3 cup
Salt as per taste

Recipe:
Wash ash gourd skin a few times
Cut into small pieces
Heat oil in a vessel
Add Fenugreek seeds
Add hing
Add Ashguard skin pieces
Add green chilly pieces
Stir
Cook in low flame
After cooking, turn off the flame
Add cooked ash gourd to the grinding jar
Add turmeric powder
Add grated coconut
Add coriander leaves
Add salt
Add water
Grind into smooth paste
ash gourd skin Chutney ready!

Mooli Vegetable Curry | Radish Leaves Curry | ಮೂಲಂಗಿ ಸೊಪ್ಪು ಕರಿ



Ingredients:
Radish with Leaves 1 bunch
Mustard seeds 1/2 tbsp
Cumin seeds 1/2 tbsp
Pinch of hing
Tomato 1
Salt 1/2 tbsp
Turmeric powder 1/4 tbsp
Kashmiri Laal mirch powder 1 tbsp
Besan flour 2&1/2 tbsp
Coriander leaves

Recipe:
Take radish with leaves
Wash & clean
Separate radish from leaves
Peel radish
Chop radish and leaves
Heat 3 tbsp oil
Add mustard seeds
Add cumin seeds
Add hing
Add radish pieces
Stir
Add radish leaves
Stir
Cook on low flame
Add tomato pieces
Add salt as per taste
Add turmeric powder
Add Kashmiri Lala mirch powder
Mix well
Cook for few mins
Add besan flour
Close lid & cook
Garnish with coriander leaves
Radish Leaves curry ready!

Bhogi Special Sajji Rotti | Pumpkin Curry & Onion Chutney | ಭೋಗಿ ಸ್ಪೆಷಲ್ ಸಜ್ಜಿ ರೊಟ್ಟಿ ಮಾಡುವ ವಿಧಾನ | ಕುಂಬಳಕಾಯಿ ಕರೀ | ಈರುಳ್ಳಿ ಚಟ್ನಿ



#1: Leafy Onion Chutney

Ingredients(Leafy Onion Chutney)
Leafy Onion 1 bunch
Oil 3-4 tbsp
Tamarind 2 inches
Salt as per taste
Turmeric powder 1/4 tbsp
Red chilli powder 1 tbsp
Roasted peanuts and sesame powder 2 tbsp
Sugar 1/2 tbsp
Water little for grinding chutney
Tempring

Recipe:
Chop leafy Onion
Heat oil in a vessel
Add chopped onions with leaf
Stir
After the onion is cooked, add tamarind
Turn off gas
Let it cool
Add cooked onion to the grinding jar
Add salt
Add turmeric powder
Add Red chilli powder
Add roasted peanuts and sesame powder
Add sugar
Add little water
Grind
Add tempting
Spicy & delicious Leafy Onion Chutney ready!

#2: Sweet Pumpkin Curry

Ingredients:
Pumpkin 1
Oil 3 tbsp
Urad dal 1 tbsp
Cumin seeds 1/2 tbsp
Mustard seeds 1/2 tbsp
Dry red chillies 2
Curry leaves
Salt 1 tbsp
Turmeric powder 1/4 tbsp
Red chilli powder 1 tbsp
Sugar little
Roasted peanuts and sesame powder 1-1/2 tbsp

Recipe:
Chop sweet Pumpkin
Remove seeds
Peel skin
Chop pumpkin into small pieces
Heat 3 tbsp oil
Add urad dal
Add cumin seeds
Add mustard seeds
Add dry red chillies
Add curry leaves
Add pumpkin pieces
Add salt
Mix well
Close lid & cook
Check pumpkin cooked properly
Add turmeric powder
Add Red chilli powder
Add little sugar
Add roasted peanuts and sesame powder
Mix well
Turn Off gas
Garnish with coriander leaves
Sweet Pumpkin Curry is ready!

Recipe #3: Sajji Rotti
Ingredients:
Sajji Flour 2 cups
Salt little
Turmeric powder little
Hot water little

Recipe:
Take Sajji flour in vessel
Add salt
Add turmeric powder
Mix well
Add little hot water to flour
Mix well
Keep adding more water to form dough
Dough is ready
Take small quantity
Knead well
Dip in sesame seeds
Take little Sajji flour on a clean surface
Gently tap dough
Keep tapping dough to round shape
Gently place it on hot pan/tava
Apply little water on roti
Roast on both sides
Sajji roti ready!

Serve Sajji roti with butter for great taste!

Sankranthi Special Ellu Chikki Recipe | Easy Sesame Chikki | ಎಳ್ಳು ಚಿಕ್ಕಿ

Ingredients:
Sesame seeds 150 gms
Jaggery 150 gms
Ghee 1 tbsp
Sugar 1/2 tbsp
Baking soda 1/4 tbsp
Water for cooking

Recipe:
Fry sesame seeds in low flame
Turnoff gas
Transfer to plate
Let it cool
Heat 2-3 tbsp water in low flame
Add jaggery
Jaggery melts
Check jaggery becomes thick
Add ghee
Stir
Add sugar
Stir
Add baking soda
Stir
Add fried sesame seeds
Mix well
Turn off gas
Grease oil on a clean surface/tray
Pour sesame chikki mix
Spread evenly using rolling pin
Cut into small square shapes
Remove it from surface/plate
Gently separate chikki pieces

Sour, Sweet, Spicy Guava Pickle | ಹುಳಿ, ಸಿಹಿ, ಖಾರವಿರುವ ಪೇರಲ ಉಪ್ಪಿನಕಾಯಿ



Ingredients:
Guava 2(not fully ripe)
Oil for tempring
1/2 tbsp fenugreek seeds
1/2 tbsp mustard seeds
1/2 tbsp cumin seeds
Pinch of hing
Salt as per taste
Jaggery 3-4 tbsp
Turmeric powder 1/4 tbsp
Red chilli powder 1/4 tbsp
Mix well
Instant pickle masala 1 tbsp

Recipe:
Cut guava into small pieces
Remove seeds from guava
Heat oil in vessel
Add fenugreek seeds
Add mustard seeds
Add cumin seeds
Add hing
Add chopped guava
Mix well
Add salt
Mix well
Close lid & cook for 5 mins
Add little water
Close lid & cook for few minutes
Check to make sure guava cooked properly
Add little turmeric powder
Add little red chilli powder
Add jaggery
Add pickle masala
Mix well
Guava Pickle ready!

Two Varieties Amla Recipe | Amla Juice | Amla Chutney | ಎರಡು ವಿಧದ ಆಮ್ಲಾ ಪಾಕವಿಧಾನ | ಆಮ್ಲಾ ಜ್ಯೂಸ್ | ಆಮ್ಲಾ ಚಟ್ನಿ

Ingredients:
Amla - 8 to 10
Ginger - 2 inches
Pepper - 8 to 10

Recipe(Amla Juice):
Wash & clean amla
Cut in medium size
Add to grinding jar
Add ginger pieces
Add pepper
Add little water
Grind
Squeeze amla juice using sieve
Add little salt to juice
Add little black salt to juice
Mix well
Take a glass of water
Add two tbsp amla juice
Mix well
You can refrigerate amla juice for serving for many days

Recipe(Amla Chutney):
Add leftover amla to grinding jar
Add little salt
Add little turmeric powder
Add 4 green chillies
Add little water
Grind
Transfer to bowl
Prepare tempring
Heat oil in vessel
Add 1 tbsp fenugreek seeds
Add pinch of hing
Add tempring to churtney
Amla chutney ready!
Serve with hot rice for great taste

Ingredients:
Cooked/Steamed Potatoes 2(medium size)
Roasted Peanuts 1 cup
Green Chillies 4-5
Onion 1 (big)
Fenugreek leaves (chopped) 1 bowl
Coriander leaves (chopped) 1 cup
Oil 2-3 tbsp
mustard seeds 1/2 tbsp
cumin seeds 1/2 tbsp
Salt 1/2 tbsp
Turmeric powder 1/4 tbsp

Recipe:
Roast green chillies without oil
Roast cooked potatoes slightly till it becomes crisp
Turn off flame
Let potatoes cool

Add peanuts to grinding jar
Add green chillies
Grind into powder (not smooth)

Heat oil for tempring
Add 1/2 tbsp mustard seeds
Add 1/2 tbsp cumin seeds
Add chopped onions
Add 1/2 tbsp salt
Add 1/4 tbsp turmeric powder
Sauté
Add grinded masala
Mix well
Cook on low flame
Add potatoes
Mash potatoes
Add washed & cleaned fenugreek leaves
Mix well
Add coriander leaves
Mix well
Turn off flame
Close lid for few Minutes

Delicious & Fingerlicking Aaloo Bharit or Aaloo Bharta is ready!

Serve hot with chapathi, Bajra roti, Jowar Roti and with rice!
