🔶 1. आलू के पकौड़े
सामग्री:

बेसन

आलू (स्लाइस किए हुए)

हरी मिर्च

अजवाइन

लाल मिर्च पाउडर

नमक

तलने के लिए तेल

विधि:

बेसन में हरी मिर्च, अजवाइन, लाल मिर्च और नमक डालकर गाढ़ा घोल बनाएं।

आलू के स्लाइस घोल में डुबोएं।

गरम तेल में सुनहरा होने तक तलें।

🔶 2. आलू की चटनी
सामग्री:

उबले आलू (मैश किए हुए)

प्याज (बारीक कटे)

हरी मिर्च

सरसों का तेल

नमक

हरा धनिया

विधि:

मैश किए आलू में सभी सामग्री अच्छी तरह मिलाएं।

ऊपर से हरा धनिया डालें।

तुरंत परोसें।

🔶 3. आलू दम
सामग्री:

छोटे आलू (उबले हुए)

दही

टमाटर प्यूरी

अदरक-लहसुन पेस्ट

काजू पेस्ट

गरम मसाला

कसूरी मेथी

तेल

विधि:

आलू को हल्का फ्राई करें।

तेल में मसाले भूनें, दही और टमाटर प्यूरी डालकर ग्रेवी बनाएं।

आलू डालें और धीमी आंच पर पकाएं।

सामग्री:

उबले आलू (टुकड़ों में कटे)

सरसों का तेल

सिरका

राई

मेथी दाना

सौंफ

हल्दी

लाल मिर्च

नमक

विधि:

तेल गरम कर सभी मसाले भूनें।

आलू, नमक, हल्दी, मिर्च और सिरका मिलाएं।

ठंडा होने पर जार में भरकर धूप में रखें।

• 2 1/4 tsp Yeast
• 1/4 cup Butter (melted)

• 1 Egg
• Oil for frying

Instructions
1. Mix warm milk, sugar, and yeast. Rest 5–10 minutes until foamy.
2. Add egg, melted butter, and salt. Mix well.
3. Gradually add flour and knead into a soft dough.
4. Cover and let rise 1 hour until doubled.
5. Roll dough, cut donut shapes, rest 15 minutes.
6. Fry in hot oil until golden. Drain.
7. Dip in glaze (powdered sugar + milk) and let set.

1) Garlic Butter Chicken

Ingredients
• 4 chicken breasts
• 4 cloves garlic (minced)
• ¼ cup chicken broth
• ¼ cup grated Parmesan
• 2 tbsp butter
• 1 tbsp olive oil
• Salt and pepper

Instructions
1. Season chicken with salt and pepper.
2. Heat oil and butter in a pan.
3. Cook chicken 5–6 minutes per side until golden. Remove and set aside.
4. Add garlic and cook 30 seconds.
5. Add broth and Parmesan, stir until slightly thick.
6. Return chicken to pan, coat with sauce, and serve.

• 1 cup evaporated milk
• 3 large eggs
• 2 tsp vanilla extract
• Pinch of salt

Instructions:

Ingredients
3 ribeye steaks
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried thyme
Salt and black pepper, to taste
Instructions
Preheat the grill to high heat.
Brush steaks with olive oil and season with salt, pepper, garlic powder, and thyme.
Grill the steaks for 4–5 minutes per side for medium-rare
(adjust time for desired doneness).

Chicken Tikka Biryani Recipe

Ingredients
For Chicken Tikka
Chicken (boneless or with bones) – 700 g
Thick curd – ½ cup
Ginger-garlic paste – 2 tbsp
Kashmiri red chilli powder – 1½ tsp
Turmeric powder – ¼ tsp
Garam masala – 1 tsp
Coriander powder – 1 tsp
Lemon juice – 1 tbsp
Mustard oil / regular oil – 2 tbsp
Salt – to taste
For Rice
Basmati rice – 3 cups (soaked 30 min)
Bay leaf 1, green cardamom 3, cloves 4, cinnamon 1 inch
Salt – to taste
For Biryani Masala / Layering
Onions – 3 large (thinly sliced & fried)
Ginger-garlic paste – 1 tbsp
Green chillies – 2 slit
Tomato puree – ½ cup
Biryani masala – 2 tsp
Mint leaves – ½ cup
Coriander leaves – ½ cup
Saffron milk / kewra water – 2 tbsp
Ghee – 3 tbsp

Method
Marinate & Cook Tikka
Mix all tikka ingredients, marinate chicken for 2–4 hours.
Grill, pan-fry, or bake till slightly charred and cooked. Keep aside.
Cook Rice
Boil rice with whole spices and salt till 70% cooked. Drain.
Prepare Gravy Base
Heat ghee, add ginger-garlic paste & green chillies.
Add tomato puree, biryani masala, half fried onions. Cook till oil separates.
Add Chicken Tikka
Add tikka pieces, toss gently. Cook 5 minutes.
Layering
First layer: chicken masala
Second: rice
Top with mint, coriander, remaining onions, saffron milk & ghee
Dum Cooking
Cover tightly and cook on low flame for 20–25 minutes.
Rest & Serve
Rest 10 minutes, fluff gently.
Serve With
Raita, mirchi ka salan, or lemon onion 🫶
