Kashmiri red chilli powder – 1 tbsp

Coriander powder – 1 tsp

Garam masala – Β½ tsp

Salt – to taste

Sugar – 1 tsp

Hot water – as required

Kasuri methi – 1 tsp

For Mango Base:
Ripe mango – 2 cups (peeled & chopped)
Sugar – ΒΌ cup
For Ice Cream Mixture:
Chilled whipping cream – 1 cup
Condensed milk – Β½ cup
Prepared mango jam (from above)
Vanilla extract – a few drops
For Chocolate Coating:
White compound – 250g
Virgin Coconut oil – 2 tbsp

Prepare Mango Jam:
Peel and cut the mango into small pieces.
Add sugar and blend into a smooth paste.
Transfer to a pan and cook for 3–5 minutes until slightly thick.
Let it cool completely.
Prepare Ice Cream Base:
In a mixing bowl, add chilled whipping cream and whip until stiff peaks form.
Add condensed milk, prepared mango jam, and vanilla extract.
Beat for about a minute until well combined.
Freeze:
Pour the mixture into silicone ice cream moulds.
Cover with plastic wrap.
Freeze overnight or until fully set.
Prepare Chocolate Coating:
In a bowl, add chopped milk compound and coconut oil. Melt it.
Transfer into a tall glass and let it cool slightly.
Coat the Chocobar:
Unmould the ice cream.
Dip each bar into the melted chocolate mixture.
Coat evenly and let it set.
Drizzle with melted white compound and garnish with rainbow sprinkles

In a mixing bowl add butter, caster sugar and brown sugar. Cream them together gently without overmixing.
Add vanilla extract, yogurt, milk, all-purpose flour, cornflour, baking soda, baking powder and coffee powder. Combine everything well to form a cookie dough. If needed, add 2 tbsp milk gradually for the perfect consistency.
Add dark chocolate chips and milk chocolate chips. Gently fold them into the dough.
Divide the dough into 6 equal portions and shape them into balls.
Arrange them in a butter paper lined cake tin or baking tray. Sprinkle extra chocolate chips on top.
Cover with plastic wrap and refrigerate for 2 hours.
Bake in a preheated oven at 180Β°C for 20–22 minutes or until the edges turn lightly golden.
Let the cookies cool slightly and enjoy them warm with gooey melted chocolate inside 😍
