😋🍚Mutton Yakhni Biryani A Gourmet Delight Awaits 🍲🍖

Ingredients:
For Mutton Yakhni (Mutton Stock):
500g mutton pieces with bones 1 large onion, sliced
1-inch piece of ginger, chopped
4-5 cloves of garlic, chopped
2 bay leaves 2-3 green cardamom pods
2-3 large cardamom 2-3 cloves
2 cinnamon stick
8/10 Black peppercorns 1 teaspoon fennel seeds
1/2 teaspoon cumin seeds
2/4 cups of water
Salt to taste
For Biryani:
3 cups Basmati rice
1 large onions, thinly sliced
2 teaspoons ginger-garlic paste 1/2 cup chopped coriander leaves 4-5 green chilies, slit 4 tablespoons vegetable oil
Salt to taste
Instructions:
For Mutton Yakhni (Mutton Stock):
In a large pot, add the mutton pieces, sliced onions, ginger, garlic, bay leaves, green cardamom pods, cloves, large cardamom, cinnamon stick, fennel seeds, cumin seeds,
black peppercorns, and salt.
Pour in 2/4 cups of water, or enough to cover the mutton.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about to 1 hours, or until the mutton is tender and the stock is flavorful.
Strain the mutton yakhni, discarding the whole spices and
solids. Set the yakhni aside.
For Biryani:
Wash the Basmati rice thoroughly and soak it in water for
30 minutes. Drain the rice.
In a large, heavy-bottomed pan, heat the ghee and vegetable oil over medium heat. Add the sliced onions and
fry until they turn golden brown and crispy. Remove half of
the fried onions and set them aside for garnish.
To the remaining onions in the pan, add ginger-garlic
paste, and sauté for a few minutes until the raw smell
disappears.
5 minutes until the mixture thickens and the oil starts to
separate.
Half of the chopped coriander leaves, and green chilies. Add the soaked and drained Basmati rice to the pot. Mix
well to coat the rice with the mutton and spice mixture.
Pour in the strained mutton yakhni (mutton stock). The liquid should be approximately 2 inches above the rice level. Adjust the salt.
Cover the pot with a tight-fitting lid and reduce the heat to low and garnish for coriender leaves.
