* Fresh sarson leaves – 500 g 🌿
* Fresh spinach – 200 g 🥬
* Ginger – ½ inch 🫚
* Garlic – 5–6 cloves 🧄
* Salt – ½ spoon🧂

*For Tadka 🔥🍳*

* Mustard oil – 2 spoons 🥄
* Chopped onion – 1🧅
* Chopped garlic – ½ spoon 🧄
* Chopped ginger – ½ spoon 🫚
* Dry red chilli – 4–5🌶️
* Tomato purée – ½ cup 🍅
* Salt – ½ spoon 🧂
* Roasted coriander powder – ½ spoon 🌰
* Red chilli powder – ½ spoon 🌶️
* Turmeric powder - ½ spoon
* Sugar – ½ spoon 🥄
* Multigrain atta – 2 spoons 🌽
* Mustard oil – 1 spoon 🥄
* Kasuri methi – 1 spoon 🥄

🟢 Easy Green Thai-Style Soup 🍜🌿

Ingredients:
1. 1 tablespoon oil 🛢️

2. 1 cup coconut milk 🥥

3. 2 cups vegetable or chicken stock 🍲

4. ½ cup mixed vegetables (carrot, beans, bell pepper) 🥕🫑

5. 100 g mushrooms 🍄

6. ½ cup fresh coriander leaves 🌿

7. 2 green chillies 🌶️

8. 3–4 garlic cloves 🧄

9. 1 teaspoon grated ginger 🫚

10. Salt to taste 🧂

11. 1 teaspoon soy sauce 🌱

12. A little lemon juice 🍋

🍳 Procedure 👩‍🍳✨
Grind coriander leaves, green chillies, garlic, and ginger with a little water into a smooth paste 🌿🌶️. Heat oil in a pan and sauté this green coriander paste until aromatic 👃. Add coconut milk and stock, stir well, and bring to a gentle boil 🥥🍲. Add vegetables and mushrooms, cook until tender 🥕🍄. Season with salt, soy sauce, and lemon juice 🍋. Switch off the heat and serve hot 😋🍜💚.
