- **Mixed Greens**: 2 cups (such as spinach, fenugreek leaves, or mustard greens), chopped
- **Green Beans**: 1 cup, chopped

- **Potato**: 1 medium, peeled and diced
- **Onion**: 1 medium, finely chopped
- **Green Chili**: 1, slit or chopped (adjust to taste)
- **Tomato**: 1 medium, finely chopped
- **Garlic**: 3-4 cloves, minced
- **Ginger**: 1-inch piece, grated or minced
- **Cumin Seeds**: 1/2 teaspoon
- **Mustard Seeds**: 1/2 teaspoon (optional)
- **Turmeric Powder**: 1/2 teaspoon
- **Coriander Powder**: 1 teaspoon
- **Garam Masala**: 1/2 teaspoon
- **Red Chili Powder**: 1/2 teaspoon (adjust to taste)
- **Salt**: to taste
- **Oil**: 2 tablespoons (vegetable oil or ghee)
- **Fresh Coriander Leaves**: for garnish, chopped (optional)
- **Lemon Juice**: 1 tablespoon (optional, for added tanginess)

1. **Prepare the Vegetables**:
- Wash and chop all the greens and vegetables as described.
2. **Cook the Potatoes**:
- Heat 1 tablespoon of oil in a pan over medium heat. Add the diced potatoes and cook until they start to become tender, about 5-7 minutes. Remove and set aside.
3. **Sauté the Aromatics**:
- In the same pan, add the remaining oil. Add the cumin seeds and mustard seeds (if using). Once they start to splutter, add the finely chopped onions. Sauté until the onions become translucent and slightly golden.
4. **Add Garlic and Ginger**:
- Add the minced garlic and ginger. Sauté for another 1-2 minutes until fragrant.
5. **Cook the Tomatoes and Spices**:
- Add the chopped tomatoes and cook until they soften and become a bit pulpy. Stir in the turmeric powder, coriander powder, garam masala, and red chili powder. Cook for 2-3 minutes until the spices are well-blended.
6. **Add the Vegetables**:
- Add the chopped green beans, green peas, and the cooked potatoes. Stir well to coat the vegetables with the spices.
7. **Incorporate the Greens**:
- Add the chopped greens to the pan. Stir to mix everything thoroughly. Cook for another 5-7 minutes, or until the greens and vegetables are cooked through and tender. If the mixture looks too dry, you can add a splash of water.
8. **Season and Garnish**:
- Adjust salt to taste. Optionally, add lemon juice for extra tanginess. Garnish with freshly chopped coriander leaves.
