🍑 200 g peach purée
🍚 150 g sugar
🥚 1 egg white
🌿 5 g agar-agar
💧 60 ml water

👩‍🍳 Method

1️⃣ Bake the cake: Whip eggs, sugar and vanilla until pale and fluffy. Fold in flour and baking powder. Bake at 175°C for 25–30 minutes. Cool completely and slice into 3 layers.

2️⃣ Prepare peaches: Dice peaches and gently cook with sugar and lemon juice for 3–5 minutes. Cool.

3️⃣ Make cream: Whip mascarpone, cream, powdered sugar and vanilla until thick and smooth.

4️⃣ Assemble: Layer sponge, cream and peach filling. Repeat and cover the cake with a thin layer of cream. Chill for at least 1 hour.

5️⃣ Make zefir: Cook peach purée, sugar, agar-agar and water until boiling and slightly thickened. Whip egg white until foamy, then gradually add the hot peach syrup while whipping until very thick and glossy.

2️⃣ Roll out the puff pastry slightly and cut 12 equal circles. Place 6 circles on a baking tray. Cut a smaller circle from the center of the remaining 6 circles to make rings.
