About me:​
I'm Michele Gualtieri and I was born in Fiesole in 1990 (Florence). After graduating as surveyor I moved to London to follow my grand passion for cooking. I began in the starred restaurant "Maze". Then I shifted to "Pied à Terre" a historic 2 Michelin stars restaurant in the British Capital. Moreover, I made a stop in Thailand. I worked for the starred restaurant "Bo.lan" in Bangkogk.

Here it's where I had the chance to refine my knowledge of Asian techniques. After a while I decided to I moved to the "Cestello Ristoclub". A renowned Florentine restaurant with a type of cousine based on seasonality and respect for the raw material. Traditional recipes were reinterpreted in a contemporary vision.
