Carob is a holistic grass-root initiative aiming to reimagine the way food is produced and consumed in Jordan by engaging communities in inspiring food experiences, from farm to table. وبعد ما نطمن عالحيوانات… شو بصير؟ 🌱

منبلّش يومنا بالمشتل، نراقب الشتلات وهي تكبر يوم ورا يوم.

بعدين مننتقل للبيوت الزراعية، نهتم بالمحاصيل ونحضّر اللي نضج منها للحصاد.

جزء من الحصاد بروح على مطبخ بيت الخروب، ليصير أطباقًا موسمية طازجة.

أما الأوراق والأجزاء اللي ما منستخدمها، فما بتروح هدر. بتصير وجبة للإوز والدجاج وأكيد بطّة، وبتكمل رحلتها ضمن دورة بتغذّي الحياة من جديد.

هيك منحب نشتغل…
كل شيء إله غاية، وكل شيء إله دور.

⁨ في 2018، وقع بإيدي كتاب اسمه “ثورة القشة الواحدة”
‏“The One-Straw Revolution”
لمزارع وفيلسوف ياباني.

ما بتذكر كيف وصلني،
بس بتذكر قديش غيّر نظرتي لكل إشي.

فتحلي باب على عالم “الزراعة الطبيعية”،
وعلى فكرة الوفرة اللي ممكن تطلع من الأرض لما نتركها تشتغل بطريقتها.

من هون، بلّشت الرحلة.

صار عندي هدف:
مش بس أزرع…
صار بدي أصلّح طريقة تفكيري، وطريقة حياتي، والطريقة اللي بنتج فيها أكلي.

ولأنه إيد وحدة ما بتصفّق،
كبرت براسي الحكاية، وقررت “أخرج للملأ”
على أمل نخلق مجتمع واعي، يقدر يغيّر الواقع الأليم اللي كلنا عايشينه.

يمكن الهدف كبير،
فقررت أبدأ بنفسي…
وببيتي…
وبمزرعتي.

وهيك نولدت فكرة خروب.

من التربة… إلى المطبخ 🌱

مرتين بالشهر، فريق بيت الخروب بيترك المطعم، وبينزل على الأرض.
كلنا منشارك بالزراعة، لأننا مؤمنين إن العلاقة مع الطعام لازم تبدأ من التربة نفسها.

اليوم كان دور أحمد وفواز 🌿
قضّينا الوقت بين الحصاد، والعناية بالأرض، ولمس التفاصيل اللي غالبًا ما مننتبهلها بالطبق… مع إنها عايشة فيه.

هيك بنبني ثقافة حقيقية، ونظام “من المزرعة إلى المائدة” مش بس كشعار، بل كممارسة يومية بيعيشها الفريق كامل.
