【すし伍水庵】
福岡市中央区天神からほど近い同区舞鶴に計画した、完全予約制の鮨店「伍水庵」。
大濠近くの旧店舗から移転し、新たな舞台として誕生しました。
カウンターや付台には近年では入手困難な約6メートルの銀杏の一枚板を採用し、面皮柱や香節、錆丸太などの銘木を各所に配しています。素朴で温かみのある土壁や盆栽の趣を引き立てる節台など、数寄屋造りの要素を取り入れ、9席の客席空間ながらも落ち着きと品格を備えた空間構成としました。また、ファサードの壁掛け行燈・置き行燈には、京都の職人による特注器具を採用しております。店主の想いが込められた鮨一貫一貫だけでなく、器や調度品にまで行き届いた美意識を、ゆっくりとお楽しみいただける空間となりました。

[Sushi Gosuian]
The website has been updated.
Gosuian, a sushi restaurant operating on a reservation-only basis, is planned in Maizuru, Chuo Ward, Fukuoka City, not far from Tenjin in the same ward.
Having relocated from its previous location near Ohori, this new venue has been created.The counter and alcove are made from a single ginkgo slab approximately 6 meters long, which has become difficult to obtain in recent years, and precious woods such as bark-covered pillars, knotty wood, and rusted logs are placed throughout the space.By incorporating elements of sukiya-style architecture, such as simple and warm earthen walls and bonsai stands that enhance the beauty of the bonsai trees, we have created a space that, despite having only nine seats, possesses a sense of calm and elegance.Furthermore, the wall-mounted and freestanding lanterns on the facade feature custom-made fixtures crafted by artisans in Kyoto.
This space allows you to slowly enjoy not only each and every piece of sushi, imbued with the owner's passion, but also the aesthetic sensibility that permeates even the tableware and furnishings.
