包丁の切れ味確認は、紙ではなくネギで行う。
紙を切るテストは、刃先の大きな欠けや鈍りを確認する方法としては有効です。
ただ、紙と食材では、刃にかかる抵抗が異なります。
ネギには薄い表皮があり、内部には水分を含んだ細かな繊維が縦方向に走っています。
刃先が十分に整っていない包丁では、切り始めに刃が滑りやすく、必要以上に力をかけることになります。
その結果、繊維が押し潰され、断面が乱れ、水分も出やすくなります。
確認したいのは、紙が切れるかどうかではありません。
力を入れずに刃が入るか。
切り始めで滑らないか。
繊維を引っ張らず、一度のストロークで切れるか。
断面に潰れや毛羽立ちがないか。
包丁は、実際に食材を切るための道具です。
研ぎ上がりの確認も、できる限り調理に近い条件で行うことが大切です。

Test your knife’s sharpness with a green onion — not paper. 🔪
Cutting paper can be a useful way to check for major chips or dull spots along the edge.
But paper and real ingredients create very different resistance against the blade.
Green onions have a thin outer skin and fine, moisture-rich fibers running lengthwise.
If the edge isn’t properly sharpened, the blade may slip at the start of the cut, forcing you to apply more pressure. This can crush the fibers, leave a rough cut surface, and release excess moisture.
What should you actually look for?
• Does the blade bite into the green onion without extra pressure?
• Does it start cutting without slipping?
• Can it cut through cleanly in a single stroke without pulling the fibers?
• Is the cut surface clean, without crushing or fraying?
A kitchen knife is made to cut food.
