LATE SUMMER HARVEST
As the summer season enters its final chapter early varietals of vegetables start to emerge, presenting an opportunity for exciting food pairings. Here, eggplants with scored surfaces & peppers are grilled simply to highlight unique textures while concentrating flavors. Steaming squash to tenderize than seasoning with sansho infused soy sauce to give subtle complexity ti the sweetness. Salted, spiced cucumbers are finished with a splash of aged kombu infused rice vinegar. Bright acidity and colorful tomatoes raw with delicate garden herbs, salt and olive oil complete this portrait of a summer dinner table.

Axe Folding Birch - Onoorekamba Is A Very Hard Tree That Takes 3 Years To Thicken A 1 Millimeter Trunk And Takes Root On The Mountains At An Altitude Of More Than 500 M. Because of this firmness, there is a name for axe break (Oore). Among the natural forests, there are few in number, and they grow in a harsh environment like cliffs and not much soil, and because of their slow growth, they are rarely planted. Black Birch is considered one of the precious trees in Japan. In the past, horse sleds then musical instruments (xylophones), In the old Manyoshu, it appeared under the name "Azusa Yumi" With a history of being presented to the the imperial court it is a wood to treasure. It is also the most significant tree of my childhood - growing up together in small town Canada.

Our hope is that each day you hold them, the gentle soul of the tree can will be felt.

A rare and precious tree grown in harsh mountain conditions north in Iwate Japan. Having grown up with birch trees in eastern Canada, its rich and unique character is embedded in memory. When the opportunity to access old growth black birch came in January we embraced it.
On release we offer 2 versions - one expressing the wood in its purest form + a second enhanced with matte black tips. Wipe urushi lacquer was applied in multiple layers with the addition of fine black sumi in a non-traditional way. Every birch tree is unique with surfaces scarred by the passing if time. Subtle enhancements of this character was our goal. In this pursuit we carved found a new technique.

Crafted with a tactile surface & an elegantly tapered shape, these chopsticks perform with delicate precision.
Our hope is that each day you hold them, the gentle soul of the tree can will be felt.

In the final stages of summer enter pumpkins & squash. Earliest versions have light & delicate flavors, pairing well with the trailing summer fish, poultry or simply on its own. An opportunity to experiment with the herbs in full bloom in different ways. Steamed at the light end, pickled or roasted for more complex tastes. Scoring the surface encourages even cooking. Each weekend at the UNU Farmers Market we gather remarkable vegetables to cook for our creative staff. Often heirloom & rare varietals that taste and look better - the farmers here offer the best of seasonal vegetables, grains and fruit. やまきぬ ぷち のうえん was the source for Red onions we use in gazpacho and salsas. Mini carrots are sweet and colorful making them ideal for our roasts and slow braised dishes. We grow marjoram in our herb garden adjacent to the KULUR Lab - which gives a meaningful counterpoint to frame the carrots sweetness. Every week our cooking is inspired which bring out our best✨

KASHI JAPANESE OAK HANDLE
Kashi or Japanese oak tree is evergreen. In early summer, it flowers in a similar way to chestnut. In Autumn blooms become small acorns. Japanese oak has a structure that is uniformly hard, has excellent dent resistance and has better impact strength than American oaks. Kashi is often found in the Kanto area (Tokyo) In Budo it’s usually use to make wooden weapons such as Bokken. Since it is heavy and very resilient, it’s one of the most favored woods to use. Japanese oak was the favorite wood of famous sword masters throughout Japanese history, because of its practicality and high durability.

Hand Painted Urushi Chopsticks

Nasu purple is inspired by the beautiful Italian heirloom eggplant Violetta di Firenze. We took its deepest purple hue & combined with a creamy white Kikusumi logo - echoing the eggplants colors. An iconic vegetable of Summer, the eggplant holds the dinner table stage equally well as the star or supporting cast as in ratatouille or curries.
Today we made a dynamic & colorful green curry utilizing vegetables sourced from the UNU Farmers Market. Ome Farm Violetta di Firenze eggplant, red peppers, and okra topped the slowly braised wagyu curry base. Served with steamed rice and Thai basil from our herb garden - it was a fitting reward for the Kikusumi team's progress this week.
