A banana in Kuwait tastes exactly like a banana in London. That isn’t a coincidence.

The whole world is eating one variety, grown from cuttings of the same plant over and over. You always know exactly what you’re getting before you peel it. Sameness is the entire business model.

The Cavendish took over because it survived the fungus that wiped out the banana before it. Then a new strain turned up, and that one is still spreading.

It’s been a long, hot summer, and we still have a couple of months of it to go.

So if we all want to keep the AC running and our gatherings indoors where it’s cool, we can each do a small part to help meet the demand that comes with it. None of it changes what you cook. It’s only about how much gets wasted around it.

People ask me which of my books to start with if they want to cook Kuwaiti food. It is this one.

From My Kuwaiti Kitchen holds 15 recipes from my own kitchen, and some of them I had never shared publicly before.

It opens with the basics — the spice blend, how the rice is really cooked, why the slow dishes need the time they need — and then moves through the rice dishes, the stews, the desserts, and the condiments that no Kuwaiti table is complete without.

It is in English and in Arabic, and it comes with a bonus recipe book.

This is my mother’s marag bamya — meat and okra stew — the dish she is best known for at home.

Okra is not originally ours. Egypt, the Levant, Iraq, Turkey and Greece all have older versions. What makes this one Kuwaiti is the method: the meat browned first and cooked slowly until golden, then onions, spices, chili and garlic, then tomato cooked all the way down. The okra is fried on its own first, which gives it a smoky depth and stops it collapsing.

We serve it over mashkhoul — white rice with saffron and rose water stirred through one side.

This kind of cooking never trends. It endures.

Have you ever been given directions like this?

Our streets have names and they have numbers. You will see them on every sign and almost never hear one in a conversation. What you get instead is the big building, the co-op everyone in the area shops at, the second traffic light, and the U-turn that puts you facing the right way. Some of the landmarks closed years ago and are still being used. The old Wimpy. The old Hungry Bunny.

And somehow, everyone always arrives.
