Spicy wing and potato wedges
7 shallots
3 garlic cloves
5 red chillies
Medium tomato cut into 4
1 medium onion sliced thinly
1 tsp cracked black pepper
1 tbsp soy sauce
1 tbsp oyster sauce
2 tsp turmeric powder
Salt
Oil for frying
Marinate wings with turmeric and salt for half an hour then fry till fully cooked set aside
Put the shallots, garlic and red chillies in the food processor and grind until u have a chilli paste
In a wok put some oil and saute the sliced onion until fragrant then pour the chillie paste and cooked it's dark red and oil separate put in the fried wings, oyster and soy sauce put a little bit of water stir and cook further until oil separate again and turn off the heat transfer to a serving plate...

Stewed pork ribs and yem
500 grams pork ribs
100 grams yem sliced
4 cloves garlic minced
1 medium onion diced
1 tsp cracked black pepper
1 tbsp oyster sauce
1 tbsp balsamic vinegar
2 tbsp soy sauce
1 thumb size ginger sliced thinly
1 tbsp brown sugar
1 bay leaf
1 tbsp oil
30 grams butter
Heat up the wok and put in butter and oil then sauté ginger till fragrant followed by onion and garlic,put in ribs and all the sauces and seasonings, stir until well combined then cover the wok let it simmer then put in yems and cover again cook in low heat stir once in a while then cook further until oil separates and it's ready to serve.

Simple chapsuy
2 stalk baby bok choy
1 stalk Celery
1 small head broccoli cut into florets
1 medium onion diced
4 cloves garlic minced
1 tbsp oyster sauce
1 tbsp soy sauce
1 tsp cracked black pepper
1 tsp chicken powder
1/2 cup water or chicken stock
1 tbsp cornstarch diluted with 2 tbsp water
1 tbsp butter or oil
Heta the wok and put in butter or oil then saute garlic and onion until fragrant then put in all the vegetables and sauces stock or water, seasonings and stir continuously then cover the wok cook for just 3 minutes then pour rge cornstarch slurry cook until sauce thickens off the heat and transfer to a serving dish.

Chicken pastil
1 whole chicken breast
4 shallots diced
2 cloves garlic
1 tsp cracked black pepper
50 grams butter
1 tbsp cooking oil
1 tsp annato seed powder ( achuete)
1 tsp turmeric powder
2 bay leaves
1 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp vinegar
Red chilli Chopped
Boil chicken breast until fully cooked and shred finely
Saute garlic and onion until fragrant then put the finely shredded chicken, oyster sauce, soy sauce, pepper, vinegar, annato seed powder, turmeric and the rest of ingredients stir until well combined cook for few minutes until oil separates and it's ready to serve.
It can be eaten with plain rice or make a sandwich...

500 grams prawns
50 grams shallots
5 cloves garlic
5 tbsp oil
1 tsp salt
10 pieces red chilies
1 tsp oyster sauce
1 tsp sugar ( optional)
1 tbsp soy sauce
In a food processor put the chillies and garlic pulse it until roughly Chopped
Heat the oil in a wok then saute chilli and garlic in a medium heat until oil splits then put the rest of the ingredients cook further until light brown then put the prawns keep stirring while cooking, when it turns golden brown it's done.

Pork adobo
500 grams pork belly or chicken
3/4 cup soy sauce
1 tbsp oyster sauce
1 tsp cracked black pepper
4 cloves garlic minced
1 medium onion diced
3/4 quarter vinegar
2 tbsp oil
1 tbsp brown sugar ( optional)
3 bay leaves
20ml water
1 tsp salt
Saute garlic and onion until fragrant then put the meat pieces keep stirring then put in the rest of the ingredients and cover the pan leave it to simmer, then dish out the meat and pour the liquid in a bowl, fry the meat back in the pan with a little bit of oil fry until browned then pour back the liquid and cover the pan, leave it to cook until sauce thickened and it's ready to serve

Sizzling Japanese tofu
I tube Japanese tofu cut into 12 pcs
Dredge in cornstarch and fry until light brown and drain in kitchen towel
For the sauce:
1 tbsp of oil
2 cloves garlic minced
1 small onion diced
1 tbsp oyster sauce
1 tsp soy sauce
Pinch of cracked pepper
Chopped spring onion
Minced red chilli
1 tbsp diluted cornstarch
50 ml chicken stock or water
200 grams minced pork or chicken
Sauté onion and garlic ubtil fragrant then put in the minced meat saute until oil separate then out the rest of the ingredients except diluted cornstarch, leave it to simmer then put in the diluted cornstarch stir until sauce thickened,
Prepare the hotplate and pour a little bit of oil or butter until it sizzles then pour the sauce and layer tge fried japanese tofu on top and it's ready to serve

Fruit salad
1 cup sugar palm fruit or kaong
1 cuop shredded coconut
1 cup pineapple bits
100 ml. whipping cream
100 ml. plain yogurt
2 tbsp condensed milk
Whip the whipping cream until soft peak then put all the ingredients and fold until well combined and chill in refrigeration before serving...

Beef broccoli
300 grams sliced beef flank or sirloins
1 medium onion sliced
4 cloves garlic minced
1 tsp Worcester sauce
1 tsp siy sauce
1 tbsp olive oil
1 tbsp butter
1 tsp cracked black pepper
Blanch broccoli then set aside ti drain liquid
Heat up olive oil and butter then saute onion and garlic until fragrant then put in beef and stir then broccoli, soy sauce, Worcester sauce, pepper then stir until sauces well combined and it's ready to serve
