🍃 鸡屎藤茶粿 / Chickweed Herbal Kuih

材料 Ingredients:
• 叶子 70g(鸡屎藤叶)chickweed leaves
• 水 150g water
• 片糖 1 1/2 条 slabs palm sugar
• 糯米粉 300g glutinous rice flour
• 椰浆 100g coconut milk
• 油 3 汤匙 tbsp oil

做法 Method:
1. 叶子加水放入搅拌机打碎
Blend the leaves with water until smooth.
2. 倒入小锅,加入片糖煮至溶化
Pour into a pot and cook with palm sugar until dissolved.
3. 将热酱汁倒入糯米粉中拌匀
Pour the hot mixture into the glutinous rice flour and mix.
4. 加入温热的椰浆,揉成面团
Add warm coconut milk and knead into a dough.
5. 分次加入油(每次1汤匙),揉至光滑
Gradually add oil (1 tbsp each time) and knead until smooth.
6. 分割成小团,轻轻压扁
Divide into small portions and lightly flatten.
7. 中火蒸15分钟,焖2分钟(中途开盖一次透气)
Steam over medium heat for 15 minutes, rest for 2 minutes (open lid once during steaming).
8. 完成后表面抹一层薄油
Brush a thin layer of oil on the surface.

份量 Yield:约 24 粒pieces

小贴士:我是用绿巨人破壁机(蔬菜键搅拌)
Tip: I use a Green Giant blender (vegetable mode for blending).

🌸 发糕 Kuih Fa Gao

🧾 材料 Ingredients
• 450g 粘米粉 — Rice Flour
• 180g 糖 — Sugar
• 400g 水 — Water
• 少许粉红色素 — A little pink coloring
• 9g Eno(水果盐)— Eno Fruit Salt

👩‍🍳 做法 Method

1️⃣全部材料(除了Eno)放入搅拌机
Blend all ingredients (except Eno)

👉 搅拌约1分钟至顺滑
Blend for about 1 minute until smooth

2️⃣加入 9g ENO
Add 9g Eno

👉 轻轻搅拌一下即可
Mix lightly (do not overmix)

3️⃣静置 2 分钟
Let it rest for 2 minutes

4️⃣倒入杯子至9分满
Pour into cups (90% full)

5️⃣大火蒸 15 分钟
Steam on high heat for 15 minutes

🍌 蒸香蕉糕 Steamed Banana Cake

🧾 材料 Ingredients
• 200g 香蕉 (Banana)
• 4 粒 鸡蛋 (Eggs)
• 120g 黄糖 (Brown Sugar)
• 50g 红糖 (Palm Sugar / Dark Brown Sugar)
• 1/2 茶匙 盐 (Salt)
• 1 茶匙 苏打粉 (Baking Soda)
• 280g 自发面粉 (Self-Raising Flour)
• 190g 植物油 (Vegetable Oil)



👩‍🍳 做法 Method

1️⃣ 混合材料
将所有材料放入搅拌机中,搅拌至顺滑无颗粒。
Put all ingredients into a blender and blend until smooth.

👉 小提示 Tip:
我使用破壁机(酱料键)搅拌约1分钟即可。
I used a high-speed blender (sauce mode) for about 1 minute.



2️⃣ 倒入模具
将面糊倒入纸杯,约9分满。
Pour the batter into paper cups, filling about 90% full.



3️⃣ 蒸制
大火蒸15分钟。
Steam on high heat for 15 minutes.

👉 小提示 Tip:
我使用电磁炉 SI4(2600W 大火)。
I used an induction cooker (SI4 – 2600W high heat).
