HOW TO MAKE OKPA ENUGU

INGREDIENTS
Okpa flour-----4 cups
Palm oil-----11/2 cups
Fresh pepper(habanero)
Salt
Uziza seed( optional) --abt 10 seeds, not mucha

N:B Okpa has a peculiar taste and so does not need so much ingredients. Certain ingredients change the taste and texture completely. For Okpa, the less, the better. The basic are just salt, pepper and oil.

PROCEDURE
1. Put enough water on fire, as much as can still cover the Okpa when you have removed the one you need for mixing

2. In a bowl,pour the Okpa flour, add the oil and mix with your hands. Ensure the oil is evenly distributed and the color uniform. Just the way you rub margarine into your flour

3. Bring the hot water and dilute to a temperature your skin can take. Please don't use warm water. Let it just be the hottest you can endure. Then pour into the Okpa mixture and start mixing with your hands. Break every lump and mix until the Okpa is all nice and smooth. The longer you mix, the better, until the texture becomes very fine.
Add more water and bring the consistency to a little lighter than moi moi, Eheeee!

4. Add the salt, grounded uziza seed and pepper(coarsely grinded). Rest your hands now, they have tried. You can use a wooden spoon to stir them together. Taste and correct seasoning.

5. Now put into whatever package you want to cook with. Plantain leaves, aluminum/ stainless plates or waterproof( I no like this one sha). The leaves give Okpa a very special taste. I suggest you try it.

6. You either tie and drop directly in the boiling water( that one we put on fire since🤪🤪🤪🤪) or you tie and put in a bowl so that when you are done tying, you begin to shake each of them up before dropping into the boiling water. This is to prevent it from settling and some parts being harder. Don't ever start cooking with cold water. E get why.

7. Cover to cook for 45mins to 1 hr depending on your source of heat. You can check with a tookpick, knife etc. If they come out clean, then your Okpa is ready.

8.Enjoy with a chilled bottle of Pepsi... Hahahaha. Don't mind these two, they want to put somebody in trouble.

Okpa goes well with pap, tom brown, garri or fruit juice.

PLEASE STOP GIVING YOUR CHILD LEFTOVER FOOD TO SCHOOL

Parents, let’s talk about what we pack for our children to school.

My dear parents, please stop giving your child the leftover food from yesterday to take to school.

I understand things are not easy, food is costly, and nobody wants to waste what’s remaining. But we must also remember that children’s stomachs are very sensitive. That food you warmed this morning might look okay at home, but after sitting in their lunchbox for hours, especially in hot weather, it can spoil and cause stomach problems.

Beyond that, imagine your child opening cold, tasteless food at break time while other children are eating fresh, nice meals. It affects their mood, confidence, and even their appetite.

If you don’t have time for a heavy meal in the morning, simple fresh options like boiled sweet potatoes, plantain, moi-moi, homemade cereal are far better than giving them leftover rice or beans or yam.

Please let’s prioritize our children's health and happiness, they deserve it.

10 BUSINESS MISTAKES TO AVOID IN 2025

1️⃣ Don't trust anyone to grow your business; rely on yourself. So be the driving force behind your business instead of letting others work for you. Get involved, be hands-on with your own business. This will make you a leader, not just a boss.

2️⃣ You can be your own boss and still fail. It's true, you work for yourself, but you don't have the right to rest. You arrive before your employees and leave after them. It's your business. You're not a civil servant. You don't have the right to rest until your business is capable of generating consistent and frequent revenue. You can sleep soundly when your business is stable; money comes in even when you sleep.

3️⃣ Put your employees in the position of boss. Don't show them you're their superior; they already know that. I mean, don't mistreat them, don't tire them out, let them work at their own pace by establishing a system in your business that allows them to earn money every day outside of their salary. This way, they'll take care of your business.

4️⃣ When you open your business and it generates money, don't say it's my money, I'm going to eat it. No, no, pay your employees, manage expenses. If there's any leftovers, put them in the bank or reinvest them in the business. In fact, don't pay yourself. GENERAL NUTMEG KNOWLEDGE

1. Nutmeg has a misleading name. Nutmeg is not a nut, despite it is answering nut and looks like nut, but rather it is a spice. This information is good for those that are nut allergies.

2. Although, they almost have the same names, but Nutmeg is different and higher than African nutmeg.

3. Nutmeg is among the thousand things that will be taught in our upcoming spice training program, plan to participate inorder to enhance your cooking and baking.

4. Nutmeg is a dried seed of a tropical evergreen tree, native to the Moluccas islands in Indonesia

5. Nutmeg grows inside a drupe that splits open and reveals the aril, around the seed. The aril is around the seed. The aril is removed (mace) and then the seed open to reveal the actual nutmeg.

6. Nutmeg is the same tree that produces Nutmeg and Mace.

7. It is best enjoyed when freshly grated.

8. It is often used together with Cinnamon, due to the similar pungent, fragrance and a subtle sweet taste.

9. Nutmeg is a close substitute of cinnamon.

10. It is usually oval in shape and pungent with a beautiful aroma.

1. Reduce Stress and Overcrowding
~ Too many chickens in a small space causes stress and fighting.
~ Ensure each chicken has at least 1.5 to 2 square feet of space.

2. Feed Them Properly
~ Nutrient deficiency, especially calcium, can lead to egg eating.
~ Provide feed rich in calcium like crushed oyster shells or bone meal.

3. Provide Proper Nesting Boxes
~ Offer dark, quiet, and clean nest boxes with soft bedding.
~ Avoid situations where eggs fall or roll, as broken eggs attract eating.

4. Collect Eggs Frequently
~ Don’t leave eggs in the nest for too long.
~ Collect them multiple times a day.

What no one told me about marriage before I enter that I want to tell you.

This is for those planning to marry or those who just got married.
If you are open-minded, you can still read.
Nobody knows it all.

1. Immediately you get married, even before having a baby, go and register your family for health insurance.
NHIS is one of the common ones and the most available in hospitals.
It will save you a lot.
There are some things the rich won’t tell you.
With NHIS, you can walk into any hospital and get treated cheap depending on the package.
A friend of mine once did an operation and all he paid was ₦10k something that would have cost ₦400k.

2. Have a family doctor very very important.
See, no church will tell you this.
Even if you don’t have money for a family doctor, have someone you can call in case of emergency.
Especially a pediatrician when you start having kids.

3. Also, have a family lawyer.
Recently, our family lawyer saved us over ₦500k in rent that I wanted to forfeit.
But because she stepped in and did her job, money was refunded seamlessly.

4. If you can afford it, have at least one domestic staff.
Someone that can at least help ease the work in the house for you and madam.
My brother, ejiro kwa afufu anya isi.
Get help if you can.

5. Buy things in bulk.
The reason I live like a wealthy man today is because I buy everything I need down to toothpaste in bulk.
You spend more buying in bits than when you buy in bulk.
That’s one of the reasons I created my sharing platform to enable family men and women with common goals.
There is nothing we don’t share. Some of you reading this are in that group.

6. Pay your children’s school fees before school resumes.
As I’m talking to you now, I’ve already sent SGM the kids’ school fees that’ll be paid in September.
I don’t have to worry about it again.
It helps me plan myself.
Do everything possible to pay school fees before resumption. You won’t know what you’re doing until money goes on leave from your side.

7. Strive to have passive income.
Something that can generate at least ₦3-5k every day.
No matter what try and get something like that.
It will save you from a lot of stress.

8. See the friends and circle your kids will have tomorrow everything depends on the school they attend.
This one is very, very important.
Even if you don’t have money, find a way to send your children to one of the best schools.
You won’t realise what you’re doing until they come of age.

9.I learnt this one from my dad always have family meetings.
You, your wife, and your kids no matter how small they are.
Discuss problems, solutions, and way forward.
Allow the kids air their opinions.

Ask the kids:
🔹Is there something mummy and daddy are doing that they don’t like?

Same thing with your wife.
Talk about what you both can do to have a stable and loving family.
This helps in uniting the family.

Every month is fine or even every 6 months.
Just make it a habit and a culture.
It’ll become a memory that sticks for the kids, and for you and madam too.

Everyone’s opinion in the family matters.
And as the man, it’s your job to hear everybody’s opinion and choose the best way to run the family.

This isn’t just for the man alone madam can initiate it too. There’s no perfect formula, yes. But this one I listed? It works every time.
I repeat if you try it, you’ll save yourself a lot of unnecessary headache and stress.

Don’t let the loud demands of a broke, arrogant girl shake your confidence. She says, “I can’t date a man without a car”; yet she’s trekking every day and can’t afford a keke napep tire. That’s not a standard; that’s delusion.

You’re doing 100 times better than her. Don’t let her opinion make you feel small.

Just because you don’t have a car now doesn’t mean you won’t drive the best one tomorrow. Straighten your back. Stay focused. Your season is coming.

You see, son, a man grows into value. As long as you’re working, learning, building; you’re rising. Trekking or not, if she can’t afford what you already have, she’s not your level. You’re the prize.

If she can’t see that, let her keep bouncing from one street guy to another. Time will humble her. You? You'll level up and walk past her like she never existed.

Don't worship beauty that lacks sense. Beauty without values, work ethic, good judgment or character is trash wrapped in good packaging. Foolish simps made her proud; not her own merit.

1) When someone lends you money, return it even before they ask for it. If you're unable to repay, keep them updated regularly. Don't just go silent on the person.

2) When you visit someone's house, don't go through their fridge. Stop asking if you can take this or that. Stay in one place and respect their space.

3) Don't ask people unnecessary questions. Apply emotional intelligence when inquiring about something. If someone had a miscárriage, avoid asking about their pregnancy. If someone dropped out of school, don't bring it up. Such questions can rúin their mood. If they don't mention it, it's best to pretend you don't know.

4) When someone is having a discussion with you, put your phone away. It shows you're concerned and paying attention. Being distracted by your phone can give the impression you don't care, and it's disrespectful.

5) Don't visit people unexpectedly. Let people know you're coming ahead of time. It shows respect for their schedule and space.

6) When you enter a room and meet people, greet everyone, not just the person you know. It shows respect and kindness to everyone present.

7) Try not to spitt in front of people. It's really disgûsting. And if you want to sneeze, use a tissue or handkerchief to cover your mouth.

8) When you take your children to someone's house or an event, keep them under control. Ask them to stay one place and avoid running around. This helps avoid inconveniencing your host and others. They might not feel comfortable telling you. Some might wárn you.

SPICE/HERB/SEASONING TIPS AND TRICKS

1. If you don't want your seasoning cubes to get soft and start bringing out water, add garri to the container where you put your seasoning cubes. It will remain strong and fresh.

2. Adding a pinch of salt to your boiling water, helps it to boil faster.

3. If your food is over salty while cooking, just peel (irish or sweet) potato and cut it into the cooking food. It will absorb the salt.

4. Participate in our upcoming spice training program for your own good.

5. If you want your beans to soft faster, wash it with salt before parboiling it.

6. Put a bulb of onion in your vegetable oil when frying meat/fish/poultry gives it a distinct flavour and aroma.

7. Using garlic, ginger and turmeric to steam your meat (protein), gives it an excellent taste.

8. Cooking with peppers without their seeds will make the food to be less spicy and hot.

9. Wrap the onions individually in a newspaper and store in a cool and dark place to keep them fresh for long time.

10. If you blend much peppers and it is too hot, blend some tomatoes and add to it. If the dish doesn't require tomatoes, then blanch some palm oil and add to it. Palm oil has a way of reducing the intensity of pepper.

11. Using sugar to cook your white yam or beans, will make it more fantastic and sweet.

12. Frying your egusi with 2 big blended bulb of onions, will give it a great taste.

13. When frying chicken, meat or fish and you don't want the oil to splash, put chuck of onions in the oil while frying and it gives it a nice taste. Also, adding salt to it, can stop it from splashing.

ISI EWU RECIPE

INGREDIENTS
1 Goat head
2 teaspoon of Ehuru (calabash nutmeg)
1 handful of sliced Utazi leaves
1 teaspoon of edible potash (akaun)
3 cubes of seasoning
2 medium-sized onions
2 tbsps of blended fresh pepper
1 cup of palm oil
1 tbsp of crayfish (optional)
Salt to taste

NOTE:
Goat head has a thick bone and comes with a sooth filled skin. Be sure to tell the butcher to scrape and cut into pieces while making sure that essential parts remain whole such as the ear, tongue and the brain. The brain is set aside from the rest of the meat because it is used also as a thickener for the sauce.

Before we cook, be sparing in your use of water, you need little water for the stock.

COOKING METHOD

In a pot, place the meat with the brain included, adding an onion (grated), the seasoning, a tablespoon of pepper, salt, water and allow to boil until the meat is tender.
While the meat boils, slice the other onions into rings, dissolve potash with a little amount of water and sieve.
A while into the meat boiling, take out the brain and place in a small mortar, add the other spoon of blended pepper and mash. When the meat is ready, separate stock from meat.
Pour oil into another dry pot. Little by little, pour potash into the oil and stir with a spatula until palm oil turns yellow and thicken.
Add the mashed brain, the stock of the meat, ehuru, crayfish, and continue to stir until blended.
Place the meat into the mixture and stir. Turn on the heat, until steaming hot.
Garnish with sliced onion rings and utazi leaves. Serve in a small wooden mortar.
