Meet Spaghetti all’Assassina — straight from Bari, Southern Italy! 🇮🇹

No boiling water. No draining. Just spaghetti cooked directly in a hot pan with tomato sauce until they develop that irresistible crispy, slightly charred crust.

🔥 Spicy, crunchy and dangerously addictive!

And yes, they’re supposed to look a little burnt. That’s where the magic happens!

Tonight’s experiment: crispy chicken & courgette with extra-crunchy Korean breadcrumbs.

Verdict: DELICIOUS.

And the courgette? The real surprise. So crunchy it tastes fried — and it isn’t.

Definitely making this again.

SCHOOL IS BACK. SO ARE THE MUFFINS. ON REPEAT. 🍫

My tried-and-tested chocolate chip muffins are officially back in nonstop production.

I’ve reduced the sugar in the original recipe to 110 g and use dark chocolate chips—and they’re still soft, fluffy, and dangerously good.

Perfect for school snacks, breakfast… or straight from the tray while they’re still warm.

WHO SAID CAULIFLOWER CAN’T BE THE STAR OF THE TABLE?

What’s for dinner?

A whole roasted cauliflower, full of flavour and made to be brought straight to the table.

It’s naturally low in calories, a source of vitamin C and fibre, and this way it becomes much more than a side dish.

Serve it whole, cut it at the table and let everyone help themselves.

Sometimes vegetables deserve centre stage too.

WILL THIS BE THE MOST UMAMI-PACKED PASTA AL POMODORO I’VE EVER MADE? 🍅

I saw a video claiming to make the perfect pasta al pomodoro, and obviously I had to try it.

The idea is to build layer after layer of tomato flavour:

🍅 ripe fresh tomatoes, used to make a fresh tomato passata
🍅 triple tomato paste
🍅 caramelised cherry tomatoes roasted in the oven
🍅 tomato water, used to risottare the pasta

Four layers of tomato flavour, all on one plate.

The theory? Maximum tomato flavour and a serious umami hit.

But does all that extra work actually make a difference?
