Daikon Kimchi Fried Rice with tons of shredded cabbage and grated carrot.. splash of ponzu to balance the spice! (I learned to make fried rice as a teenager working in an “Asian” restaurant, taught by the Mexican kitchen staff. As one does.) Shout out to anyone who remembers Hibachi Joe’s! 😜

Pasta Porcini, Salamella Mantovana e salamoia(l’antico condimento toscano)

Porcini slices fried in butter, set aside. Chopped porcini toasted brown and set aside. Salamella and garlic browned and deglazed with white wine, added to sausage, browned mushrooms and a bit of sour cream and pasta water for creaminess. Salamoia bolognese added at the end with a bit of parsley. Topped with sliced porcini and dusting of salamoia.
