I’ve always loved the comforting aroma of roast pork filling the kitchen — it reminds me of family gatherings and cozy Weekend dinners. This version is a little twist on a classic: tender roast pork with homemade apple sauce and crispy apple strips.

In this recipe, I leave a little fat on the porkchop — just enough to keep the meat juicy and flavorful as it roasts slowly in the oven. The fat caramelizes beautifully, blending with balsamic vinegar, brown sugar, and apples to create a rich, tangy glaze. The crisp apple strips on top add that lovely contrast — sweet, crunchy, and light.

✨ My First Taste of Khao Soi
I was first introduced to this wonderful Northern Thai dish at Wanna’s birthday party on a Saturday in Stavern. My husband, Gisle, and I were invited to celebrate with her. Wanna, who runs a Thai food truck, had gathered many of her Thai friends that evening. Everyone was so warm and welcoming, and the table was full of vibrant, flavorful Thai dishes.

Among all the food, one dish stood out to me—the rich, golden bowl of Khao Soi (Curry Chicken Noodle Soup). Its fragrant coconut curry, tender chicken, and crispy noodles on top made it unforgettable. That first taste sparked my love for this dish, and it remains a special memory of both friendship and flavor.
