A beautiful Miso Salmon for One from WTCT a few weeks back.

Although it’s easy to fall into the “girl dinner” trap and call it a day with some tinned fish and crackers, I try to make an extra effort to nourish myself with delicious, exciting food when I’m home alone.

Miso Salmon is one of my all-time favourite dishes — whenever it’s on a menu, I will be drawn to it like a moth to a flame. Rich, flavourful salmon is perfectly paired with a sweet-and-salty miso glaze.

Once you’ve learned how to make it at home, you’ll never look back. It’s also so easy to cook for one, as all you need is a beautiful salmon fillet and the miso glaze — my version is infused with zingy ginger and has a lovely sesame crust, and comes together in just ten minutes. If you are cooking for a crowd you can easily make this with a big side of salmon too (I shared instructions in the recipe).
