My own version of Ramen - Pork Bone + Miso Ramen😁

First time making home made fresh noodle, I can tell you it is very easy to make, you only need flour, water, oil and salt.

I cooked my pork bone soup with the pressure cooker (short cut just to save my time). The meat came out very tender, although the soup is not so rich, but it is fine for me as I added the Miso paste to turn it into Miso Ramen.

Blanching is a part of cooking process, that pronounced in Chinese 焯水 (Chao Shui)

Blanching the meat removes the blood and other impurities from the muscles and bones thus achieving a less cloudy broth. The time for blanching the meat should not be too long, otherwise it will lose the nutrition and delicious taste.

Quick and easy lunch, but full of flavor.

Meat Floss - I am using Chicken breast in this recipe to make chicken floss.

There are so many ways that you can eat your meat floss. You can use it as a sandwich filling, make meat floss bun or meat floss mini spring roll, eat them with congee, or just eat as a snack.

This is very easy to make and it is a must try recipe. Happy cooking & baking.

Rotiboy is a popular Malaysian Bakery with Signature Coffee buns.

Rotiboy, also call as Mexican Bun. I am not a coffee lover, but this Rotiboy definitely is one of my favorite buns. I always cannot resist to buy some when I pass by the Rotiboy Bakery shop in Malaysia.

My first try to make the coffee bun today, and YES, it smells too nice and it tastes too good. Crunchy top with the soft, fluffy and buttery inside really makes my family non stop eating them. My kitchen smells like the Rotiboy bakery shop.

This is one of the handy mode that I really like. It helps the cleaning job much easier.

Step:
1) Add water to the mixing bowl, just enough to cover the top of the blade.

2) Add a drop of dishwasher liquid

3) Select Pre-Clean mode, select Dough, Universal, Fat or caramel, or Browning.

4) All clean in just a few minutes.

Cranberry Mung Bean Cake.

Ingredients
7 oz mung beans, yellow, dried, split
2 oz dried cranberries
35 oz water
non-stick spray oil, to grease ( *I use cook glutinous flour to coat the mold instead)
2 oz butter
½ oz rock sugar powder
or ½ oz brown sugar
1 ½ oz maltose syrup
or 1 ½ oz brown rice syrup, organic (* I use 1oz maple syrup instead)

Preparation
1) Place a bowl onto mixing bowl lid, weigh in mung beans, cover with water and set aside to soak for 2 hours. Drain soaked beans through simmering basket, rinse well and set aside to drain.

2) Place cranberries into mixing bowl and chop 10 sec/speed 7 or until chopped in small pieces. Transfer to a bowl and set aside.

3) Place water into mixing bowl, insert simmering basket with drained beans and cook 20 min/Varoma/speed 1. Remove simmering basket with spatula and set aside. Discard steaming water. Meanwhile, grease wooden moon cake molds (2 oz) with non-stick spray oil.

4) Place steamed mung beans, butter, rock sugar powder and maltose into mixing bowl and blend 1 min/speed 10. Then, without measuring cup cook 10 min/250°F/speed 3.

5) Add reserved chopped cranberries, insert measuring cup and mix 20 sec/speed 3. Transfer to a bowl, set aside until cool enough to handle.

6) Form cooled dough into 1 oz balls, press into prepared cake molds, cover with cling wrap and refrigerate at least 2 hours. Turn the molds upside down and carefully remove the cakes when ready to serve.

Tips & Tricks
Recipe inspired by Ann Chang, Thermomix® Independent Team Leader California.
Mung Bean Cake can be served after molding but refrigerating the cakes allows flavors to develop.
For personal preference, you can also make homemade bean paste filling as the filling of mung bean cake or omit dried cranberries.

Traditional Butter Cake. Very rich flavour, moist and crunchy top. Almost everyone favorite. My kids love it.

Ingredients :
250g Butter
100g Sugar (*you can use 170g if you prefer sweeter version)
60g milk
4 eggs
250g self raising flour

Step:
1) Preheat oven 150 degree Celsius fan force. Line a 23cm diameter baking pan with baking paper or grease with oil.

2) Insert butterfly whisk in the mixing bowl. Add softened butter and sugar, beat 3 mins/speed 3.5

3) Set machine to 50 sec/speed 3.5 Add milk follow the egg one by one through the lid hole while the machine is running.

4) Add the flour. mix 25 sec/speed 2

5) Use spatula to scratch down the side and continue another 5 sec/speed 2

6) Bake in the oven for about 40 minutes. (depend on your oven)
