Made in the Thermomix, this light and fluffy cheesecake gets its signature cloud-like texture from whipped egg whites folded gently into the batter. Unlike a traditional cheesecake, it's delicate, airy and beautifully jiggly.
Top tip: once baked, leave the cheesecake in the turned-off oven with the door slightly ajar for 20–30 minutes. This helps prevent it from collapsing as it cools.
