Everyone loved the Thermomix sour dough focaccia muffins at our bread showcase, so here is the receipt if you want to give them a go!

Thermomix Sourdough Chimichurri Focaccia Muffins

Makes: 16 muffins

Dough

Ingredients
100 g active sourdough starter
390 g warm water
15–20 g olive oil
500 g bread flour
10 g sea salt

Day 1
Place the active sourdough starter and warm water into the Thermomix bowl. Mix 20 sec / Speed 3.
Add the olive oil. Mix 10 sec / Speed 3.
Add the bread flour and sea salt. Mix 30 sec / Speed 4, then knead 3 min / Dough mode.
Transfer the dough to a lightly oiled bowl or container. Cover and rest for 30 minutes.
Perform 3–4 sets of stretch and folds, spaced 30 minutes apart.
Leave the dough to bulk ferment at room temperature for about 4 hours, or until it has increased noticeably in volume.
Cover and refrigerate overnight.

Chimichurri

Ingredients
1 cup fresh parsley leaves
3 garlic cloves
¼ tsp salt
¼ tsp black pepper
½ tsp red pepper flakes
2 tbsp red wine vinegar (optional)
120 g olive oil

Method
Place parsley and garlic into the Thermomix bowl. Chop 3 sec / Speed 7. Scrape down the sides.
Add the salt, pepper, red pepper flakes, red wine vinegar and olive oil.
Mix 10 sec / Reverse / Speed 3.
Transfer to a bowl and allow to stand for 15 minutes before using.

Day 2

Generously oil a 16-hole muffin tin.
Divide the cold dough into 16 equal portions (about 63 g each) and place into the muffin cups, filling each about halfway.
Cover loosely and leave to rise for 3–4 hours, until puffy and nearly doubled.
Preheat the oven to 220°C (425°F).
Rub or spoon chimichurri over the tops of the dough. Lightly oil your fingertips and dimple each muffin.
Bake for 16–20 minutes, or until golden brown and cooked through.
Brush with additional chimichurri while still warm. Serve warm or allow to cool on a wire rack.

Sunday breakfast made extra special with homemade Hollandaise 🤍

I made this silky, creamy Hollandaise in the Thermomix using really simple ingredients — nothing fancy, just things I already had in the kitchen. I love recipes like this that feel a little indulgent but don’t require a special trip to the shops!

And of course, I had to put it to good use… 😋
I already had Thermomix sourdough English muffins in the freezer, which I toasted and loaded up with crispy bacon, a perfectly cooked egg and a generous drizzle of that homemade Hollandaise.

🍞 Bread Showcase Success! 🍞

What a fantastic couple of nights at our bread showcase this week! Together with two other team leaders, we welcomed 19 people on the first night and 14 on the second.

We had so much fun making and sharing bagels, focaccia muffins, sourdough and a selection of delicious dips. It was great seeing everyone enjoying themselves, asking questions and, of course, sampling everything we made! 🥯🍞

A huge thank you to everyone who came along and made both nights such a success. We’re already looking forward to running the next one!

I made my own red pesto in the Thermomix today and I'm so happy with how it turned out! 🌿🍅

One of my favourite swaps was using cashews instead of pine nuts. They give it a deliciously creamy texture while being much more budget-friendly. It's such an easy way to save money without compromising on flavour.

For dinner, I stirred some of the pesto through cream to make the most delicious, rich sauce and tossed it with fresh pappardelle. Simple, quick, and absolutely packed with flavour! 😍

Now I've got homemade red pesto ready to use in pasta, sandwiches, wraps, risotto, or as a dip throughout the week.

One of the reasons I love using ghee is that it's more than just a cooking fat. Because the milk solids are removed during cooking, it's naturally low in lactose and casein, making it a great option for many people who are sensitive to dairy.

Ghee is also rich in fat-soluble vitamins like A, E and K, and contains beneficial fatty acids, including butyrate, which plays a role in supporting gut health. It has a high smoke point too, making it ideal for roasting, frying and sautéing.

What I love most is that one simple recipe becomes the foundation for so many others. I use my homemade ghee in curries, spice pastes, roasted vegetables, homemade naan, rice dishes, and even some baking recipes. It adds such a rich, buttery flavour.

Making it at home means I know exactly what's in it, it works out more economical than buying it, and I always have a jar ready to go when I'm cooking.

Honestly, once I started making ghee in my Thermomix, I never looked back. It's one of those simple pantry staples that's easy to make, incredibly versatile, and something I frequently.

There’s something so satisfying about turning sourdough discard into something delicious instead of letting it go to waste!

This week I made sourdough discard English muffins in my Thermomix, and they turned out beautifully—soft, fluffy, and with that classic golden crust. Next time I think I would just make them a little thicker.

Instead of cooking them in a frypan, I baked them in the oven at 220°C. I preheated a tray and placed it on top of the muffins while they baked to help give them that classic flat English muffin shape. They baked for 15 minutes with the tray on top, then I removed the tray and baked them for another 2 minutes to finish.

Last night I made the Spicy Chicken with Fragrant Coconut Rice, and wow—the flavours were absolutely incredible! 🌶️🥥 The chicken cooks gently in the sauce, making it beautifully tender, then I transferred it to the Thermoserver to stay warm while the rice cooked.

I did find I needed to cook the rice much longer than the recipe suggested, and it ended up with more of a risotto-style texture. Next time, I'd cook the rice separately in the simmering basket as I normally would, then pour that delicious coconut sauce over the top before serving.

Despite that little tweak, the flavour combination was next level and it's definitely a recipe I'll be making again!
