Lunch! And Lunch boxes 😅😬
What a daily challenge!
And I say that as a homeschool parent, not even needing to actually pack lunchboxes daily (of course we still need lunch daily 😆)… trying to get enough food, thats good food, easy to eat and not too messy, organised and packed into that box…! Without too much plastic waste… Eeeeek! Is it possible?!
I have a few lunch things that work so well for us, that having a thermomix to help make completely easily, of course, that I want to throw out there to help you this week with that daily grind - but this is a community effort, people! Please share your tips and tricks and we can all benefit from the “mind hive” 😆 Sharing’s caring!
Corn muffins! Easy as a tin of creamed corn (or even plain), a dozen done. We like feta crumbled onto ours before baking. Zucchini or courgette would also rock this same concept. (Peel the green skin off for fussy children… shhhh)
Pizza scrolls. Or pizza pieces! our top favourite, always, from very plain, to Hawaiian, to greek (feta again LOl with spinach).
“Sushi sandwiches“ easier than rolling and somehow just less fiddly to make, I just leave it whole and avoid the plastic wrap entirely, just got to fit into a sandwich container 👍Tuna and avo usually 😊
Make custard (egg! Protein!) and pop into little tubs, add cocoa when cooking for a choc version. Its really filling 👍
Yoghurt - same thing LOL except not as proteiny… either make plain and can add a blob of fruit puree or jam (treat!) to flavour, or do you know the trick where you can use a packet mix and make it up to 2L with extra milk powder (1C) ? which makes it cheaper, less sweet but still yummy and easy… I do mine overnight in the thermomix jug/bowl directly for such a big batch, too easy 😍
Leftovers! Reheat in thermomix (reheat setting) so you can walk away and do something else in your busy morning and put it into a little thermos sort of flask. Soup or pasta etc. (choose the gentlest stir for something fragile like pasta, it works perfectly for a single batch of reheating!). Other tip - put lunch serving aside AS YOU SERVE DINNER (so technically, not a leftover!) because if you wait to see if anything is left… there might not be! This lets you plan on this healthier and cheaper option for lunch. Trying out nacho beans with a side of corn chips this week - could be on to a winner!
Cook eggs and then when peeled, throw into tm6 with mayo for a quick egg filling. Poach chicken and then shred (with mayo?) for sandwich fillings - add lettuce and its perfect 😊
