It's soup weather! ☔️ Check out this cozy and hearty recipe with an easy frozen hashbrown hack! 🥔
Let's make Baked Potato Soup! 🥣
INGREDIENTS:
1 medium white onion, chopped
2 stalks leeks, sliced
2 Tablespoons unsalted butter
3 Tablespoons MAYA All-Purpose Flour
½ cup cream cheese, cubed
5 cups chicken broth
1 cup fresh milk
6-8 pcs. frozen hash browns (regular size), crumbled
½ teaspoon fine salt
1/4 teaspoon ground black pepper
For the toppings:
400g bacon (chopped), sour cream, grated cheese, chopped garlic chives or spring onions
On the side:
sour cream, cooked crispy bacon, chopped chives, grated cheddar
*This recipe yields 10-12 servings.
LET'S MAKE IT! 👩🏻🍳
�In a large cooking pot, toss in sliced bacon. Cook over medium heat until fat renders and bacon becomes crisp. Remove bacon with a slotted spoon and leave bacon fat in the pot. Set it aside.
�In the remaining bacon fat, toss in the onions. Sauté until onions are soft, then add leeks.�Next, add butter and MAYA All Purpose Flour. Mix well and cook for 1-2 minutes, then add cream cheese. �Mash cream cheese bits with a spoon until melted then pour in chicken broth. Bring mixture to a boil and continue to mix until smooth. �Add milk. Stir in crumbled frozen hash browns. Season with salt and pepper. Simmer for 20-25 minutes.
�Serve soup hot with crumbled bacon, chopped garlic chives, sour cream and grated cheddar cheese.
