Vegetable Pulao Recipe:
Ingredients:
1 cup basmati rice (or any long-grain rice)
2 cups water
1 tablespoon ghee or vegetable oil
1 small onion, thinly sliced
1 small carrot, diced
1 small potato, diced
1/2 cup green peas (fresh or frozen)
2 cloves garlic, minced
1-inch piece of ginger, minced
1 green chili, finely chopped (optional, adjust to taste)
Whole spices: 1 bay leaf, 2-3 cloves, 2-3 green cardamom pods, 1-inch cinnamon stick
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
Salt to taste
Fresh cilantro (coriander leaves) for garnish
Lemon wedges for serving (optional)
Instructions:
Rinse and soak the rice: Wash the rice under cold water until the water runs clear. Then, soak the rice in enough water for 20-30 minutes. Drain the rice before using.
Prepare the vegetables: Wash and chop the vegetables as per the ingredients list.
Saute the whole spices: Heat ghee or oil in a heavy-bottomed pot or pressure cooker over medium heat. Add the bay leaf, cloves, cardamom pods, and cinnamon stick. Saute for a minute until fragrant.
Add cumin seeds and aromatics: Add the cumin seeds to the pot and let them splutter for a few seconds. Then, add minced garlic, ginger, and green chili. Saute for another minute until the raw smell disappears.
Add vegetables: Add sliced onions to the pot and saute until they turn translucent. Then, add diced carrots, potatoes, and green peas. Cook for a few minutes until the vegetables are slightly tender.
Add rice and spices: Drain the soaked rice and add it to the pot. Stir well to combine with the vegetables and spices. Add turmeric powder and salt to taste. Mix everything evenly.
Cook the pulao: Pour 2 cups of water into the pot. Stir gently. If using a pressure cooker, close the lid and cook for 1 whistle on medium heat. If using a regular pot, cover with a tight-fitting lid and cook on low heat until the rice is cooked and water is absorbed, about 15-20 minutes.
Fluff and serve: Once the pulao is cooked, remove it from heat and let it sit covered for a few minutes. Then, fluff the rice gently with a fork. Garnish with fresh cilantro leaves. Serve hot with lemon wedges on the side, if desired.
