Ingredients:
- 1 cup Rava (Semolina)
- 1 tablespoon Cumin seeds
- 1 medium Onion, finely chopped
- 1 small Tomato, chopped
- 1 small Carrot, diced
- 5-6 Green Beans, chopped
- 1 small Potato, diced
- 1-2 Green Chilies, slit
- 1 teaspoon Grated Ginger
- 2-3 cups Boiling Water
- Salt, to taste
- 2 tablespoons Oil or Ghee
- Fresh Coriander, chopped (for garnish)
Instructions:
1. *Preparation*: Cut green beans, carrot, tomato, onion, potato, and green chili. Grate the ginger.
2. *Roast the Rava*: In a dry pan, roast the rava on medium heat until it turns golden and aromatic. Set aside.
3. *Cook the Vegetables*:
- In the same pan, heat oil or ghee and add cumin seeds. Let them splutter.
- Add chopped onion and sauté until translucent.
- Add grated ginger and slit green chilies. Fry for a minute.
- Add chopped potatoes, green beans, and carrots. Cook for a few minutes until the vegetables start to soften.
- Add chopped tomatoes and cook until they become soft and blend with the other vegetables.
4. *Combine with Rava*:
- Add the roasted rava to the vegetable mixture. Stir well to coat the rava with the spices and vegetables.
5. *Add Water and Cook*:
- Pour boiling water into the mixture, stirring continuously to avoid lumps.
- Add salt to taste. Lower the heat and cover the pan.
- Let it cook for about 2-3 minutes until the rava absorbs the water and the upma reaches the desired consistency.
6. *Serve*:
- Garnish with fresh coriander and serve hot.
