After watching Culinary Class Wars Season 2, my biggest takeaway is how important sauces and broths are in cooking and of course, the beauty of plating ✨

For a home version of “fine dining,” I realised it doesn’t have to be fancy plates, just serve everything in small, individual portions instead of one big dish.
I really gave it my all for this meal… used every small plate I could find at home 🤣

📝 Belinda’s Fine Dining Menu A:
🩷 Mushroom Shrimp Paste
🩷 Tandoori Chicken
🩷 Caviar Macaroni

看完《黑白大厨第二季》,最大的感悟就是,酱料和高汤在做菜时的重要性,还有就是摆盘的精致感✨

换作家庭版的精致餐饮就是煮好了不要放大大的碟子,全部分成一人份放小碟。为了这餐我尽力了,把家里可用的小碟都拿出来用了🤣

🩷口蘑虾滑
🩷坦都里烤鸡
🩷鱼子酱通心粉
🩷椒盐黑虎虾青豆酱
🩷百香果渍彩色番茄

Tangy, spicy, and incredibly fragrant. One dip and you won’t be able to stop! Super easy to make in just a few minutes. Perfect with seafood, grilled meat, or vegetables 🤤

✅ Ingredients
🌶 5 green bird’s eye chilies
🌶 7 red bird’s eye chilies
🌶 5–6 cloves garlic
🌶 3 sprigs coriander (include the roots for extra flavour)
🌶 1 lime (juiced, pulp can be blended in as well)
🌶 10 calamansi (juiced)
🌶 3 tbsp fish sauce
🌶 2 tbsp palm sugar (white sugar can be used as a substitute)
🌶 1–2 tbsp warm water

📝 Instructions
▪️ Blend the green chilies, red chilies, and garlic together.
▪️ Add the coriander (including the roots for extra aroma).
▪️ Squeeze in the lime juice and calamansi juice; the pulp can be blended together as well.
▪️ Add fish sauce and palm sugar.
▪️ Blend until the palm sugar dissolves. Add a little warm water if the sauce is too thick.
