A certain 9 : 32 in the year twenty-eleven was when a leap of faith was taken. With 1,100+ entries across 53 categories reviewed by a judging panel of 44 global hospitality leaders, and just 225 projects making the Shortlist, we’re truly honoured to be among the finalists.

Thevar was brought to life as a sensorial tribute to Chef Mano Thevar ancestry. Drawing from the quiet grandeur of Chola architecture and the lived warmth of an Indian home, every detail was thoughtfully considered to create a meaningful experience for guests.

Chef’s Hideaway: An Exclusive Private Dining Experience

On Level 2, hidden within, lies Chef Mano’s private sanctuary. Guests ascend a narrow stairway, guided by glowing sconces and softly lit handrails, a visual rhythm that builds anticipation with each step.

Upon arrival, they are gently greeted by a piece of traditional Gond tribal art, a quiet gesture of welcome, steeped in cultural heritage. This moment of stillness sets the tone for what lies ahead. At the landing, a concealed door with a stone handle opens to reveal a domed corridor, drawing the gaze toward a serene ten-seat dining room. Beyond, a soft green landscape breathes calm into the space.

Wrapped in the warmth of an Indian home, the room is layered with rich textures and subdued lighting. A curated collection of art lines the walls, deepening the sense of intimacy. This is Chef Mano’s .thevar private sanctuary, a haven where culinary storytelling unfolds in quiet dialogue with heritage and space.

Part 2 of 3 .sg .thevar

Language, Materiality, Colour Tones, Art

Every surface and form was chosen with artisanal intention, celebrating the hierarchy, symmetry, and
intricacy that define Chola temples while embracing a contemporary minimalism.

Hand-applied textured lime plaster in earthy tones evokes the rawness of ancient granite surfaces,
complemented by curated bronze accents and artisanal lamps that add warmth, narrative, and
cultural depth. Handcrafted stone handles recall ancient granite craftsmanship, while lathed wooden
balustrades and reinterpretations of Chettinad pillars appear throughout as table bases, furniture
structures, and spatial dividers. Deep saffron (kesari) leathered banquette seating injects vibrant
contemporary energy into the otherwise muted, earthy palette.

Subtle curves, inspired by the temple’s ornate carvings, are embedded into architectural elements like
beams and colonnades, translated into modern forms within the existing shophouse framework—
seamlessly fusing past and present.

Vibrant and colourful Gond artworks, originating from the tribal communities of Central India, are used
throughout the space to evoke a sense of energy and connect back to cultural roots.

Our team will be taking a rejuvenating break from the afternoon of 16 February to 24 February, and we will resume operations on 25 February! In celebration of the Lunar New Year, we are delighted to unveil the first of three segments from our recent completed bespoke project, .sg , a 2-star 🌟 🌟 Michelin fine-dining restaurant in Singapore by .thevar

Part 1 of 3 Thevar

A Culinary Sanctuary Rooted in Ancestry

A sensorial tribute to Chef Mano’s ancestry, the space draws on the quiet grandeur of Chola architecture and the warmth of an Indian home, unfolding as both a spiritual and culinary journey.

Hidden behind conserved 19th-century Peranakan shophouses once built for a wealthy Chinese merchant, Thevar reveals itself gently. The original façade is preserved and refreshed, with its timeworn granite threshold carefully brushed to honor the heritage bones. A simple glass door and curated display offer a subtle prelude.

Inside, layered thresholds, symmetry, and framed views guide guests toward the main dining hall—the symbolic sanctum. The journey moves from a quiet gateway (Gopura), through a colonnaded passage (Mandapam), to a central dining space (Inner Courtyard) lit by an artificial skylight, echoing the sacred heart of an Indian home.

Dim lighting creates a contemplative atmosphere where architecture and cuisine exist in quiet harmony.

Part 1 of 3

Celebrating The Hands That Laboured.

Potager offers an immersive blend of gastronomy and art, embodying our philosophy. Our design pays homage to key contributors—ingredients, producers, artists, and partners—integral to the Potager experience. Each element tells a compelling story of origin and journey, creating a sophisticated canvas that spotlights diverse contributors behind an unforgettable culinary and artistic journey for patrons.

Guests are greeted at the porte cochere by a composed maître d’ lobby, with an elegant dried installation complementing the iconic reception. The main restaurant, Potager, features warm ambient light against artisanal finishes, light timber notes, and louvered panels, creating an intimate atmosphere. The show kitchen offers marble counters where diners can watch chefs in action, surrounded by carefully orchestrated mediums like marble, timber, and terrazzo, juxtaposed against exterior views and a feature wall sculpture crafted from pineapple fibers.
