Pla Neung Manao - Thai steamed fish with spicy lime sauce (ปลานึ่งมะนาว)

For 2-4 serves

Ingredients :

1 Fish (around 800g.) Sea bass or white fish
2 stalks Lemongrass (cut into 5 cm.)
4-6 pcs. Kaffir lime leaves
4-6 pcs. Sliced galangal (or you can use
ginger)
4-6 leaves Chinese cabbage
1-2 stalks Celery (cut a half)
1/2 cup Chopped Celery
2-4 cloves Garlic (sliced)

👉 Spicy Lime Sauce
1-2 pcs. Coriander root
10-15 cloves Garlic
10-20 pcs. Thai bird’s eye chilies
4 tbsp Fish sauce
5 tbsp Fresh lime juice
2 tsp Sugar
2 tsp Palm sugar
1/2 tsp Salt

Instructions :

- Clean the fish and cut the stomach of the fish to
remove the guts. Clean the fish again. Then,
score the fish about 2-3 marks for both sides.

- Put the lemongrass, galangal and kaffir lime
leaves inside the stomach of the fish. Set aside.

- Now, let’s cook the sauce. Prepare a mortar and a
pestle, then add the coriander root, garlic, chilies
and salt into the mortar. Pound until it turns to be
a coarse paste.

- After that, add fish sauce, lime juice and sugar
into it. Use the pestle to press the palm sugar and
stir until palm sugar is dissolved. Taste as you
like. Pour it into a spare bowl. Set aside.

- Next, prepare a steam pot. Add the water into the
pot and boil. While you are waiting for the water
to boil, prepare a big plate and place the Chinese
cabbage and celery at the bottom, add the fish
on the top. Pour a half of the sauce on the fish.
After that, move the plate into the steam pot and
cook it for 15-20 mins.

- When the fish is cooked, remove the plate out of
the steam pot. Pour the rest of the sauce on the
fish. Sprinkle the sliced garlic and chopped celery
on top. (You can add some slice of lime too.)
Now, ready to serve !

Guay Tiew Moo Tom Yum - Thai Tom Yum Pork noodles ( ก๋วยเตี๋ยวหมูต้มยำ )

Ingredients :

👉 Soup
3 liters Water
500 g. Pork ribs
1 head Daikon radish (cut into 1 cm.)
6-8 cloves Garlic
2 pcs. Coriander root
1 tsp White peppercorn
200 g. Pickled garlic juice
A cube of Crystalline sugar
1 tsp Salt
1/2 cup Soy sauce

👉 Noodles & Condiments
500 g. Rice noodles
200 g. Mung bean sprouts
300 g. Chinese kale (cut into 2-3 cm.)
500 g. Pork (Boil and slice)
200 g. Minced pork (scalded)
200 g. Pork liver (scald and slice)
250-300 g. Pork ball (scald or boil in the
soup)
2-3 stalks Celery (chopped)
2-3 stalks Green onion (chopped)
10-15 cloves Garlic (smash and fry in the oil
until it turns yellow, pour in a
spare bowl)
300 g. Crispy fried pork skin (optional)
150 g. Preserved pickle radish
1/2 cup Lime juice
1/2 cup Fish sauce
1/2 cup Sugar
1/4 cup Dried red chili flakes
1 cup Ground roasted peanut
1 bottle Ground pepper
2-3 liters Water

Instructions :

👉 How to cook the soup

- Pound the garlics, coriander roots and the
peppercorns in a mortar until it turns to be a
coarse paste. Put it in a small thin fabric and tie
with robe. Set aside.

- Boil 3 liters of water in a big pot at high
temperature. Add the pork ribs, a bag of herb
paste, daikon radish, crystalline sugar, pickle
garlic juice, salt and soy sauce.

- Simmer until it is boiling again. Then, take off the
oily part on top to get the clear soup. Simmer
around 20-30 mins with medium to low
temperature until the pork ribs are cooked and
soft.

- Boil the pork in the soup until it is cooked and
slice. Add the pork balls in the soup before
cooking noodles. (If you want a clear soup, do not
cook the minced pork and liver in the soup. You
have to cook it separately)

👉 How to cook the noodles & vegetables

- Boil 2-3 liters of water in a pot. Use a strainer to
scald the noodles, bean sprouts and Chinese
kale. Place in a bowl.

👉 How to add condiments and cook Tom Yum soup

- Next step, prepare a small mixing bowl or a small
pot to cook Tom Yum soup. Add 1 tbsp of lime
juice, 1 tbsp of fish sauce, 1 tsp of sugar, 1/2 tsp
of dried red chili flakes, 1-2 tbsp of ground
roasted peanut, 1 tsp of pickle radish, 1 tsp of
chopped celery & green onion, 2 tbsp of minced
pork and 1 tsp of fried garlic in oil.

- After that, add around 2-3 cups of soup into a
mixing pot. Stir to mix and dissolve the sugar,
then pour it into the noodles.

- Add the pork, pork liver pork balls and boiled
radish on top. ( Add the crispy fried pork skin if
you have ) Sprinkle the ground pepper and ready
to serve !

Pla Tod Nampla Takrai grob - Deep fried fish with fish sauce and fried lemongrass (ปลาทอดน้ำปลาตะไคร้กรอบ)

For 2-4 serves

Ingredients :

800 g. Sea bass or any white fish
1 stalk Lemongrass (slice in small
pieces)
1 cup Crispy flour or All purpose flour
5 tbsp Fish sauce
2 1/2 tbsp Palm sugar

Instructions :

- Clean the fish and cut into small pieces
(remove the bone), set a side.

-Add the crispy flour into the bowl and mix with
cold water to make the batter.

- Bring a deep pan to the stove and set at
medium temperature. Add a lot of oil into the
pan for deep fry. Then, dip the fish into the
batter and fry until it turns brown and crispy.
After that, remove it from the oil and set aside.

- Add the sliced lemongrass into the the batter
and fry until it turns brown too, then set aside.

- Lastly, remove the oil from the pan. Add the
fish sauce and palm sugar into the pan. Set at
low temperature, stir to dissolve the sugar and
cook until it is caramelized. After that, pour the
sauce all over the fried fish and add the fried
lemongrass on the top.

Dipping sauce ingredients :

4-6 cloves Garlic
6-10 pcs. Chili
1-2 pcs. Coriander root
2 tbsp Fish sauce
2 tbsp Lime juice
1 tbsp Sugar/Palm sugar
A pinch of Salt

Instructions :

- Add Garlic, chilies, coriander root and a pinch
of salt into a motar. Pound them until it turns to
be a coarse paste. (If you have a blender, just
add everything into it and blend.)

- After that, add fish sauce, lime juice and sugar
into it. Stir to dissolve the sugar. Taste and
adjust as you like. Then, serve in a small bowl.
