Guay Tiew Moo Tom Yum - Thai Tom Yum Pork noodles ( ก๋วยเตี๋ยวหมูต้มยำ )
Ingredients :
👉 Soup
3 liters Water
500 g. Pork ribs
1 head Daikon radish (cut into 1 cm.)
6-8 cloves Garlic
2 pcs. Coriander root
1 tsp White peppercorn
200 g. Pickled garlic juice
A cube of Crystalline sugar
1 tsp Salt
1/2 cup Soy sauce
👉 Noodles & Condiments
500 g. Rice noodles
200 g. Mung bean sprouts
300 g. Chinese kale (cut into 2-3 cm.)
500 g. Pork (Boil and slice)
200 g. Minced pork (scalded)
200 g. Pork liver (scald and slice)
250-300 g. Pork ball (scald or boil in the
soup)
2-3 stalks Celery (chopped)
2-3 stalks Green onion (chopped)
10-15 cloves Garlic (smash and fry in the oil
until it turns yellow, pour in a
spare bowl)
300 g. Crispy fried pork skin (optional)
150 g. Preserved pickle radish
1/2 cup Lime juice
1/2 cup Fish sauce
1/2 cup Sugar
1/4 cup Dried red chili flakes
1 cup Ground roasted peanut
1 bottle Ground pepper
2-3 liters Water
Instructions :
👉 How to cook the soup
- Pound the garlics, coriander roots and the
peppercorns in a mortar until it turns to be a
coarse paste. Put it in a small thin fabric and tie
with robe. Set aside.
- Boil 3 liters of water in a big pot at high
temperature. Add the pork ribs, a bag of herb
paste, daikon radish, crystalline sugar, pickle
garlic juice, salt and soy sauce.
- Simmer until it is boiling again. Then, take off the
oily part on top to get the clear soup. Simmer
around 20-30 mins with medium to low
temperature until the pork ribs are cooked and
soft.
- Boil the pork in the soup until it is cooked and
slice. Add the pork balls in the soup before
cooking noodles. (If you want a clear soup, do not
cook the minced pork and liver in the soup. You
have to cook it separately)
👉 How to cook the noodles & vegetables
- Boil 2-3 liters of water in a pot. Use a strainer to
scald the noodles, bean sprouts and Chinese
kale. Place in a bowl.
👉 How to add condiments and cook Tom Yum soup
- Next step, prepare a small mixing bowl or a small
pot to cook Tom Yum soup. Add 1 tbsp of lime
juice, 1 tbsp of fish sauce, 1 tsp of sugar, 1/2 tsp
of dried red chili flakes, 1-2 tbsp of ground
roasted peanut, 1 tsp of pickle radish, 1 tsp of
chopped celery & green onion, 2 tbsp of minced
pork and 1 tsp of fried garlic in oil.
- After that, add around 2-3 cups of soup into a
mixing pot. Stir to mix and dissolve the sugar,
then pour it into the noodles.
- Add the pork, pork liver pork balls and boiled
radish on top. ( Add the crispy fried pork skin if
you have ) Sprinkle the ground pepper and ready
to serve !
