⚽🌶️ Match Day Munchies
Swiss Mambo Beef & Black Bean Quesadilla with Corn Salad
Big flavour. Easy prep. Perfect for sharing during the match.
Serves: 12
Ingredients
🌽 Corn Salad
• 1 box Swiss Sweet Kernel Corn, drained
• 1 large green sweet pepper, diced
• 2–3 medium tomatoes, diced
• ½ red onion, finely chopped
• 1 tbsp bandania (chadon beni)
• 1 tsp parsley
• 2 tbsp oil
• 1 tsp salt
• Juice of 1 lime
🌶️ Mambo Braised Beef
• 3 lbs beef clod
• ½ cup green seasoning
• 2 tsp salt
• 1 tsp black pepper
• ½ red onion, sliced
• 2 pimento peppers, sliced
• 5 cloves garlic, crushed
• 1 tbsp allspice berries
• 1 tbsp fennel seed
• 1 tbsp coriander seed
• 1 cup water
• ½ cup Swiss Mambo Sauce
🫘 Quesadillas
• 1 box Swiss Black Beans, rinsed and drained
• 1 cup Mexican cheese blend
• 1 cup grated cheddar cheese
• 1 pack flour tortillas
• Butter for griddling
Method
Step 1: Make the Corn Salad
• Combine sweet pepper, tomatoes, red onion, bandania and parsley in a bowl.
• Add corn, oil and salt.
• Squeeze over lime juice and toss well.
• Chill until ready to serve.
Step 2: Sear & Braise the Beef
• Rub beef with green seasoning and salt.
• Sear on all sides until browned.
• Transfer to an oven-safe dish.
• Sauté onion, pimento and garlic.
• Add black pepper, allspice, fennel and coriander seeds.
• Stir in water and Swiss Mambo Sauce.
• Pour over beef, cover tightly and bake at 300°F (150°C) for 4 hours.
Step 3: Shred the Beef
• Shred beef using two forks.
• Pour strained braising liquid back over the meat.
Step 4: Assemble & Toast
• Place cheese on one half of each tortilla.
• Add beef and black beans.
• Top with more cheese and fold.
• Cook in a buttered skillet for 2–3 minutes per side until golden and crisp.
Step 5: Serve
• Slice into wedges.
• Top with corn salad and microgreens.
