White Chicken Chili

Ingredients
1 tbsp. neutral oil
1 medium yellow onion, chopped
1 jalapeño, seeded, finely chopped
2 cloves garlic, finely chopped
1 tsp. dried oregano
1 tsp. ground cumin
3 boneless, skinless chicken breasts, cut into thirds
5 c. low-sodium chicken broth
2 (4.5-oz.) cans green chiles
Kosher salt
Freshly ground black pepper
2 (15-oz.) cans white beans, drained, rinsed
1 1/2 c. frozen corn
1/2 c. sour cream
1 avocado, thinly sliced, for serving
1/4 c. chopped fresh cilantro, for serving
1/4 c. crushed tortilla chips, for serving
1/4 c. shredded Monterey Jack, for serving

Directions

Step 1
In a large pot over medium heat, heat oil. Add onion and jalapeño and cook, stirring, until softened, about 8 minutes. Add garlic, oregano, and cumin and cook, stirring, until fragrant, about 1 minute. Add chicken, broth, and chiles; season with salt and pepper. Bring to a boil, then reduce heat and simmer, uncovered, until chicken is tender and cooked through, 10 to 12 minutes. Transfer chicken to a plate and shred with 2 forks.
Step 2
Add beans to pot and bring to a simmer. Cook, smashing about one-quarter of beans with a wooden spoon, until slightly thickened, about 10 minutes. Add corn and shredded chicken and cook, stirring, until heated through, about 1 minute more. Remove from heat and stir in sour cream.
Step 3
Ladle chili into bowls. Top with avocado, cilantro, chips, and cheese.

Sugar Snap, Orange, and Teriyaki Stir-Fry

Ingredients
1/2 (8.8-oz.) package rice stick noodles
1 1/4 lb. sliced boneless, skinless chicken breast
3 tbsp. cornstarch
2 tbsp. canola oil
1/2 sliced red onion
2 chopped garlic cloves
2 c. sugar snap peas
1/2 c. teriyaki sauce
2 tbsp. rice wine vinegar
1 tbsp. sesame oil
1 tbsp. toasted sesame seeds
2 peeled and sliced small oranges
Fresh cilantro leaves and sliced red chiles, for garish

Directions

Step 1
Prepare rice stick noodles according to package directions.
Step 2
Meanwhile, toss together chicken breast and cornstarch. Cook in canola oil in a large skillet over high heat, 2 to 4 minutes. Add red onion and garlic and cook until chicken is cooked through, 1 to 2 minutes. Add sugar snap peas and cook until bright green, 1 to 2 minutes. Stir in teriyaki sauce, rice wine vinegar, sesame oil, and toasted sesame seeds. Serve over rice noodles topped with oranges. Garnish with fresh cilantro leaves and sliced red chiles.

Swedish Meatballs with Chicken

Cooking with ground chicken removes almost 9 grams of saturated fat per serving from the meal, while the savory sauce (and heavy cream) still keep it plenty flavorful. It's an easy way to make this comfort food dish just a little healthier, without making it flavorless.

Ingredients
1 lb. ground chicken
1/3 c. chopped onion
1 large egg, beaten
1/4 c. plain breadcrumbs
1 1/2 tsp. chopped garlic
1/4 tsp. ground allspice
1/4 tsp. fresh nutmeg
Kosher salt and freshly ground black pepper
2 tbsp. canola oil
2 tbsp. all-purpose flour
1 1/2 c. beef broth
2 tbsp. heavy cream
Chopped flat-leaf parsley, for garnish
Mashed potatoes and lingonberry jam, for serving

Directions

Step 1
Combine chicken, onion, egg, breadcrumbs, garlic, allspice, and nutmeg in a bowl. Season with salt and pepper. Form mixture into 10 meatballs.
Step 2
Heat oil in a large nonstick skillet over medium heat. Add meatballs and cook, turning occasionally, until golden brown on all sides and cooked through, 12 to 14 minutes. Remove to a plate. Add flour to pan and cook, stirring 30 seconds. Slowly add broth and cream and cook, stirring occasionally, until thickened, 2 to 3 minutes. Add meatball and any juices and cook, turning, until coated, about 1 minute. Garnish with parsley and serve over mashed potatoes with lingonberry jam alongside.

These tacos are quick, simple, and seriously satisfying.

Ingredients
Citrusy Shrimp Kaboom Kabobs
10 corn tortillas
cilantro
Radishes, sliced
Lime wedges
Cotija cheese, crumbled
salsa

Directions

Step 1
Prepare Citrusy Shrimp Kaboom Kabobs.
Step 2
Use shrimp to fill warmed corn tortillas.
Step 3

Air Fryer Salmon Flatbreads

Layer labneh or Greek yogurt, salmon, veggies, and feta on warm flatbread for a satisfying dinner in minutes. Fork and knife optional

Ingredients
1 tbsp. red wine vinegar
2 tbsp. olive oil, divided
1 tbsp. capers, chopped
2 scallions, 1 finely chopped and 1 thinly sliced
Kosher salt and pepper
1 pt. grape tomatoes
1 lb. skinless salmon filet, cut into 11/2 inch pieces
1 tbsp. chopped flat-leaf parsley
Labneh or Greek yogurt, for serving
4 pieces naan or flatbread, warmed
2 c. baby arugula or kale
Sliced scallion, for serving
Crumbled feta, for serving

Directions

Step 1
In small bowl, combine red wine vinegar, 1 tablespoon olive oil, capers, chopped scallion, and 1/4 teaspoon pepper; set aside.
Step 2
Heat air fryer to 400°F. In bowl, toss tomatoes and remaining tablespoon oil with 1/4 teaspoon each salt and pepper. Season salmon with 1/4 teaspoon each salt and pepper.
Step 3
Place salmon in single layer on 1 side of air fryer and add tomatoes to remaining space (piling them is great). Air-fry until salmon is just barely opaque throughout, 6 minutes.
Step 4
Transfer tomatoes to bowl with vinegar-scallion mix and toss to combine, then toss with parsley.
Step 5
Spread labneh or yogurt on flatbreads, top with salmon and arugula, then spoon tomato mixture on top. Sprinkle with sliced scallions and crumbled feta if desired.
