Turkey Tacos

Ingredients
1 tbsp. olive oil
1 large onion, finely chopped, plus more for serving
Kosher salt
2 cloves garlic, pressed
1 lb. ground turkey
1/2 to 11/2 teaspoons chipotle chile powder
1 tsp. ground cumin
1/2 c. canned tomato sauce
1/2 small head iceberg lettuce, shredded (about 2 cups)
1/4 cup fresh cilantro leaves, roughly chopped
8 hard corn taco shells, warmed
1/2 c. grated extra-sharp Cheddar cheese
Sour cream and lime wedges, for serving
Directions

Step 1
Heat oil in large skillet on medium. Add onion and 1/4 teaspoon salt and cook, covered, stirring occasionally, until tender, 6 to 8 minutes. Stir in garlic and cook 1 minute.
Step 2
Add turkey and cook, breaking up into small pieces, 5 minutes. Sprinkle with chipotle powder, cumin, and 1/2 teaspoon salt and cook, continuing to break turkey up, 2 minutes more.
Step 3
Stir in tomato sauce and simmer until slightly thickened, 4 to 5 minutes.
Step 4
In bowl, toss lettuce with cilantro. Fill taco shells with turkey and top with Cheddar, then lettuce. Serve with onion, sour cream, and lime wedges if desired.

Apple Cinnamon Pull-Apart Bread

INGREDIENTS
DOUGH
2 1/2 c. all-purpose flour
1/4 c. granulated sugar
1 package active dry yeast (about 2 1/4 teaspoons total)
1/2 tsp. kosher salt
1/4 c. whole milk
4 tbsp. unsalted butter
3 large eggs
1 tsp. pure vanilla extract
FILLING
1/4 c. packed brown sugar
1 tsp. ground cinnamon
1/4 tsp. freshly grated nutmeg
4 tbsp. unslated butter
1 Golden Delicious apple
Caramel sauce and coarse salt
DIRECTIONS
STEP 1
In a large bowl (or the bowl of an electric mixer), whisk together the flour, sugar, yeast, and salt. Place the milk and butter in a small heavy-bottomed saucepan and cook over low heat until the butter melts, 5 to 6 minutes. Remove from heat.
STEP 2
Add the milk mixture to the flour mixture, then add the eggs and vanilla. With the mixer on low, beat until the flour mixture is moistened. Increase the speed to medium and mix until the dough is smooth, about 6 minutes. Scrape the dough down in the bowl to loosen it, then cover with plastic wrap and a dishtowel. Set the bowl in a warm place and let the dough rise until it doubles in size, about 45 minutes.
STEP 3
While the dough is rising, line a 4 1/2- by 8 1/2-inch loaf pan with parchment paper, leaving a 3-inch overhang on the long sides. Butter the parchment and the sides of the pan. In a small bowl, combine the brown sugar, cinnamon, and nutmeg. In a microwave-safe bowl, melt the butter.
STEP 4
Punch the dough down, then transfer to a lightly floured work surface and roll into a 12- by 18-inch rectangle. If the dough is sticking, sprinkle the underside with a bit more flour. Arrange the dough so the long side is in front of you. Brush the melted butter over the dough, then sprinkle with the brown sugar mixture.
STEP 5
Core and cut the apple into 1/4-inch pieces. Cut the dough crosswise into 6 even strips. Sprinkle 1 strip with some of the apples, gently pressing them into the dough. Top with another strip of dough and more apples; repeat with the remaining strips of dough and apples. Cut the stack into 6 equal portions. Stand the prepared loaf pan on one of its short sides, and arrange the stacks with cut sides facing out (tucking in any fallen apples). Cover and let rise for 20 minutes.
STEP 6
Heat oven to 350 degrees F. Bake the loaf until deep golden brown, 40 to 45 minutes. Let cool in the pan for 5 minutes, then transfer to a wire rack and let cool for 10 minutes more. Drizzle with caramel sauce and sprinkle with coarse salt, if desired.

Sour Cream-Chocolate Chip Scones

INGREDIENTS
2 c. all-purpose flour
1/4 c. granulated sugar
1 tbsp. baking powder
1/2 tsp. kosher salt
6 tbsp. cold unsalted butter
1 1/4 c. semisweet chocolate chips
3/4 c. sour cream
1 large egg
1 tsp. pure vanilla extract
DIRECTIONS
STEP 1
Heat oven to 425 degrees F. Line a baking sheet with parchment.
STEP 2
In a large bowl, whisk together the flour, sugar, baking powder, and salt. Add the butter and, using a pastry blender or two knives, cut it in until the mixture forms small crumbs. Add the chocolate chips and toss to combine. Make a well in the center of the mixture.
STEP 3
In a bowl, whisk together the sour cream, egg, and vanilla. Add to the flour mixture and, using a fork, gently stir until incorporated (do not overmix). Bring the dough together into a ball.
STEP 4
On a lightly floured surface, shape the dough into an 8-inch round (about 1 inch thick). Cut into 8 wedges, separate, and transfer to the prepared baking sheet. Bake until golden brown, 12 to 14 minutes.

Lemony Salmon Piccata

Ingredients
4 (6-oz) skinless salmon fillets
1/2 tsp. Coarse salt
1/2 tsp. pepper
3 tbsp. all-purpose flour
2 tbsp. olive oil
3 garlic cloves, minced
1/4 c. dry white wine, such as sauvignon blanc
1/4 c. lemon juice (from about 2 lemons), plus lemon slices for garnish
2 tbsp. rinsed and drained capers
2 tbsp. Chopped parsley
2 tsp. unsalted butter
Directions

Step 1
Season salmon with salt and pepper; dredge in flour in a shallow bowl, shaking off excess.
Step 2
Heat oil in a large cast-iron or nonstick skillet over medium-high heat. Cook fillets, turning once, until golden, about 2 minutes. Reduce heat to medium, and add garlic; continue to cook, 1 minute. Add wine, lemon juice, capers and parsley; simmer over medium-low heat until fish is just cooked through, 5 to 6 minutes. Remove pan from heat. Add butter; stir until melted, about 30 seconds.
Step 3
Garnish with lemon slices; top with sauce before serving.

Crispy Mustard Chicken

INGREDIENTS
4 tbsp. extra-virgin olive oil
2 tbsp. fresh lemon juice
1 tbsp. Dijon mustard
Kosher salt and pepper
1/2 c. fresh flat-leaf parsley, chopped
2 tsp. fresh thyme leaves
8 small chicken thighs (about 2 1/4 lbs. total)
10 cloves garlic, 8 left in their skins, 2 peeled and smashed
1 1/2 lb. medium Yukon gold potatoes (about 6), quartered
DIRECTIONS
STEP 1
In a large bowl, whisk together 2 tablespoons oil, the lemon juice, mustard and 1⁄4 teaspoon each salt and pepper; stir in the parsley and thyme. Add the chicken and garlic (in their skins) and toss to coat; let sit for 10 minutes.
STEP 2
Place the potatoes and smashed garlic in a large pot. Add enough cold water to cover and bring to a boil. Add 1 teaspoon salt, reduce heat and simmer until just tender, 15 to 18 minutes. Reserve 1⁄2 cup of the cooking liquid, drain the potatoes and garlic, and return them to the pot. Mash with the remaining 2 tablespoons oil, 1⁄4 teaspoon each salt and pepper, and 2 tablespoons of the reserved cooking liquid (adding more liquid as necessary).
STEP 3
While the potatoes are cooking, heat a 12" cast-iron skillet over medium heat until hot, about 2 minutes. Place the chicken, skin side down, in the skillet and spoon the garlic cloves around it. Place a medium skillet on top of the chicken and put heavy cans in the skillet to weigh it down (this will flatten the chicken so it cooks up evenly and extra-crisp). Cook until the skin is golden brown and crisp, 8 minutes.
STEP 4
Remove the cans and top skillet, turn the chicken over and stir the garlic. Return the skillet and cans and cook until the chicken is cooked through, 5 to 6 minutes more. Serve with the potatoes.
