BBQ Chicken & Pineapple Skewers with Crispy Fries

Ingredients:
For the Skewers:
1½ lbs (700g) chicken breast, cut into chunks 🍗
2 cups fresh pineapple chunks 🍍
1 green bell pepper, cut into pieces
1 red onion, cut into wedges
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
For the BBQ Glaze:
½ cup (120ml) barbecue sauce
1 tbsp honey
1 tsp Worcestershire sauce
For the Fries:
2 lbs (900g) potatoes, cut into fries 🥔
2 tbsp vegetable oil
1 tsp salt
½ tsp paprika
Instructions:
Preheat oven to 220°C (425°F) and soak wooden skewers in water for 15 minutes.
Toss the fries with oil, salt, and paprika. Spread onto a baking tray and bake for 30–35 minutes, turning halfway through.
In a bowl, season the chicken with olive oil, paprika, garlic powder, salt, and pepper.
Thread chicken, pineapple, bell pepper, and onion alternately onto skewers.
Grill over medium-high heat (200°C / 400°F) for 10–12 minutes, turning occasionally.
Mix barbecue sauce, honey, and Worcestershire sauce in a small saucepan and warm gently.
Brush the skewers generously with the glaze during the last few minutes of cooking.
Continue grilling until the chicken reaches an internal temperature of 74°C (165°F).
Arrange the fries on a serving platter and place the skewers on top.
Serve immediately with extra barbecue sauce on the side.
