BBQ Chicken & Pineapple Skewers with Crispy Fries

Ingredients:

For the Skewers:

1½ lbs (700g) chicken breast, cut into chunks 🍗
2 cups fresh pineapple chunks 🍍
1 green bell pepper, cut into pieces
1 red onion, cut into wedges
1 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp salt
½ tsp black pepper

For the BBQ Glaze:

½ cup (120ml) barbecue sauce
1 tbsp honey
1 tsp Worcestershire sauce

For the Fries:

2 lbs (900g) potatoes, cut into fries 🥔
2 tbsp vegetable oil
1 tsp salt
½ tsp paprika
Instructions:
Preheat oven to 220°C (425°F) and soak wooden skewers in water for 15 minutes.
Toss the fries with oil, salt, and paprika. Spread onto a baking tray and bake for 30–35 minutes, turning halfway through.
In a bowl, season the chicken with olive oil, paprika, garlic powder, salt, and pepper.
Thread chicken, pineapple, bell pepper, and onion alternately onto skewers.
Grill over medium-high heat (200°C / 400°F) for 10–12 minutes, turning occasionally.
Mix barbecue sauce, honey, and Worcestershire sauce in a small saucepan and warm gently.
Brush the skewers generously with the glaze during the last few minutes of cooking.
Continue grilling until the chicken reaches an internal temperature of 74°C (165°F).
Arrange the fries on a serving platter and place the skewers on top.
Serve immediately with extra barbecue sauce on the side.

4 medium potatoes, cut into wedges
3 tbsp olive oil
3 cloves garlic, minced
½ cup grated Parmesan cheese
1 tsp paprika
1 tsp Italian seasoning
Salt & black pepper
2 tbsp fresh parsley, chopped
👨‍🍳 Instructions
Prep potatoes
Wash and cut potatoes into wedges (leave skin on for extra crisp).
Season
In a bowl, toss potatoes with olive oil, garlic, paprika, Italian seasoning, salt, and pepper.
Add Parmesan
Sprinkle Parmesan and mix well to coat every wedge.
Bake
Preheat oven to 425°F (220°C).
Spread wedges on a baking sheet (don’t overcrowd).
Bake for 30–35 minutes, flipping halfway.
Finish & serve
Sprinkle with fresh parsley and extra Parmesan before serving

Reese’s Peanut Butter No-Bake Bars
Creamy peanut butter, rich chocolate, and zero oven time , the kind of dessert that disappears straight from the fridge.
Ingredients:
For the Base:
1 cup unsalted butter, melted
2 cups graham cracker crumbs
2 cups powdered sugar
1 cup creamy peanut butter
1/2 cup chopped Reese's Peanut Butter Cups
For the Chocolate Topping:
1 1/2 cups semi-sweet chocolate chips
1/4 cup creamy peanut butter
Directions:
Prepare the Base Layer:
In a large mixing bowl, combine the melted butter, graham cracker crumbs, powdered sugar, and peanut butter. Mix until smooth and well combined. Stir in the chopped Reese's Peanut Butter Cups.
Press into the Pan:
Line an 8x8-inch or 9x13-inch baking dish with parchment paper. Press the peanut butter mixture evenly into the bottom of the pan.
Make the Chocolate Topping:

1 tsp onion powder
1 tsp paprika
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
4 tbsp unsalted butter, divided
2 tbsp olive oil
6 garlic cloves, minced
½ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped
12 oz spaghetti
2 cups heavy cream
4 oz cream cheese, softened
1 cup shredded mozzarella cheese
¾ cup grated Parmesan cheese
½ cup reserved pasta water
1 tsp garlic powder
½ tsp salt
½ tsp black pepper
1 tbsp fresh parsley, chopped (for garnish)
Directions:
Season chicken breasts on both sides with garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper.
Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until deeply golden with seared edges and cooked through. Transfer to a plate.
In the same skillet, reduce heat to medium and add remaining 2 tbsp butter. Stir in minced garlic and cook 1 minute until fragrant.
Return chicken to the skillet, spoon garlic butter over the tops, sprinkle with ½ cup Parmesan and parsley, then cover briefly so Parmesan melts onto the chicken. Set aside and slice into thick strips.

18 oz spaghetti

⅜ tsp crushed red pepper flakes (optional)
Salt and black pepper, to taste
1½ cups heavy cream
¾ cup chicken broth
4½ oz Velveeta cheese, cubed
¾ cup shredded mozzarella cheese
¾ cup grated Parmesan cheese
3 oz cream cheese
1½ tsp Dijon mustard
1½ tsp lemon juice
1½ tbsp chopped parsley, for garnish
Directions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook until tender with a slight bite according to the package directions. Drain the pasta, reserving a small splash of the pasta water, and set it aside.
2. Season the chicken strips with Cajun seasoning, smoked paprika, salt, and black pepper. Heat the olive oil together with 3 tablespoons of butter in a large skillet over medium high heat.
3. Add the chicken to the skillet and cook for about 6 to 7 minutes, stirring occasionally, until the chicken develops golden edges and is fully cooked. Transfer the chicken to a plate and set aside.

1/3 cup mayonnaise

Instructions:
