π·π Homemade lasagnaβ¦ because apparently I like to make things difficult. π
And YES, thereβs Cabernet involved. In the sauce and in the cook. ππ·
π
THE SAUCE
β’ 1 lb ground beef
β’ 15 Roma tomatoes β peeled & chopped
β’ Bell pepper
β’ 1 large onion
β’ 8 oz chopped fresh mushrooms
β’ 8 cloves of minced garlic β YES, EIGHT. π§π§ββοΈ Vampires arenβt invited.
β’ Diced black olives β TRUST ME π
β’ Italian seasoning
β’ Bay leaf β simmer, then remove
β’ Β½ cup Cabernet Sauvignon π·
Hit it with the immersion blender to even everything out, then let it simmer for 45β60 minutes until itβs nice and THIIIIICK. π
π§ THE CHEESE SITUATION
β’ 30 oz ricotta
β’ 8 oz freshly shredded Asiago, Romano & Parmesan blend β reserve a handful for the top
β’ Another ΒΌ cup Parmesan, because cheese math is different π
β’ 2 eggs
β’ Italian seasoning
β’ 1 tsp garlic powder
Freshly shredded cheese is important here. We have standards. π
π ASSEMBLY
Layer sauce + uncooked noodles + cheese mixture in a 9x13 pan. Make sure those noodles are surrounded by plenty of sauce so they can soak up all that goodness overnight.
And YES β I use cast iron enameled pan. It makes a difference and I will not be taking questions at this time. π
Finish with sauce and the reserved cheese.
Now, because I am simultaneously extra and lazy, I assemble the whole thing the night before. Add about ΒΌ cup Cabernet over the top for a little extra moisture π·, cover tightly with plastic wrap and refrigerate overnight.
π₯ THE NEXT DAY
Remove the plastic wrap, cover tightly with foil and bake at 350Β° for 50β55 minutes.
Uncover and bake another 10β15 minutes until hot, bubbly and beautifully browned.
Then LEAVE HER ALONE for 15β20 minutes before slicing. π
That last part matters unless you want your beautiful lasagna sliding across the plate like a cheesy landslide.
Add a big salad π₯, garlic bread π₯ and, obviously, another glass of Cabernet. π·
Homemade lasagna night. πππ·
Is it a ridiculous amount of work? Yes.
Will I forget that by the time I take the first bite? Also yes. π
