Warm, cozy, and bursting with flavor, this Creamy Reuben Soup is a delicious twist on a classic favorite! 🍲🥬🥓🧀✨
Ingredients:
- 3 tablespoons unsalted butter
- 1 medium yellow onion, finely chopped
- 2 ribs celery, chopped into ¼-inch pieces
- 2 cloves garlic, minced
- ¼ cup all-purpose flour
- 4½ cups chicken broth
- 1 lb deli-sliced corned beef, chopped or shredded
- 1 14-oz can sauerkraut, thoroughly drained
- 1 teaspoon caraway seeds
- ½ cup Thousand Island dressing
- 2 bay leaves
- 1 cup heavy cream
- 2 cups shredded Swiss cheese (divided)
- 2 slices rye bread, cubed into ½-inch pieces
- 1 tablespoon olive oil
- 2 tablespoons fresh parsley, chopped (for garnish)
- Salt (to taste)
Directions:
1️⃣ Preheat your oven to 375°F (190°C). Toss the rye bread cubes with olive oil and a sprinkle of salt, then spread them on a baking sheet and bake for 8–10 minutes until they’re golden and crispy.
2️⃣ In a large pot, melt the butter over medium heat. Add the finely chopped onion and celery, letting them cook for about 5 minutes until they soften up. Toss in the minced garlic and cook for another 30 seconds, filling your kitchen with a delightful aroma.
3️⃣ Sprinkle the flour over those lovely veggies, stirring to create a light golden roux, which should take only about 1–2 minutes.
4️⃣ Gradually whisk in the chicken broth. Next, stir in the chopped corned beef, drained sauerkraut, caraway seeds, Thousand Island dressing, and bay leaves. Give it a good stir to combine everything nicely!
5️⃣ Bring the mixture to a gentle boil, then reduce the heat. Cover the pot and let it simmer for 20–25 minutes, remembering to stir occasionally. Your soup is starting to come together beautifully!
6️⃣ Once cooked, remove the pot from the heat and discard the bay leaves. Stir in the heavy cream and 1½ cups of Swiss cheese until everything is melted and smooth, creating that sumptuous, creamy texture.
