Ingredients
4 beef short ribs
Salt to taste
1 bunch fresh rosemary, minced
1-2 cloves garlic, minced
Freshly ground pepper to taste
2 cups beef stock
Optional, wh**ky oak smoking chips or chunks
Method
1. Preheat your Napoleon® gas or charcoal grill to 300°F. Prepare to use indirect grilling methods and set up your favorite smoking method.
2. Separate the ribs into individual bones if not already done. Then, trim the beef short ribs of any extra fat and silverskin.
3. Rub the ribs with salt, fresh rosemary, garlic, and black pepper.
4. Set the beef ribs away from the heat above a drip tray with 1½ cups of beef stock. Put the remaining stock into a spray bottle.
5. Smoke the beef ribs for 1.5-2 hours, spritzing with the stock every 30-45 minutes.
6. Wrap the ribs in foil and continue cooking until an internal temperature of 205°F. Remove from heat and rest.
7. Serve on a bed of mashed potatoes, top with your favourite gravy, and pair with your favorite seasonal sides.
