Crock Pot Southwest Chicken and Rice 🍗🍚
Get ready for a delicious and easy meal with this flavorful crockpot Southwest chicken and rice dish. Perfect for busy days when you want a hearty and satisfying dinner.
Ingredients:
1 lb boneless, skinless chicken breasts
1 cup salsa
1 can black beans, drained and rinsed
1 cup corn kernels
1 red bell pepper, diced
1 cup chicken broth
1 cup long-grain white rice
1 tsp cumin
1 tsp chili powder
1 tsp garlic powder
Salt and pepper, to taste
Fresh cilantro, chopped (for garnish)
Lime wedges (for serving)
Directions:
1. Prep Ingredients: Place chicken breasts in the bottom of the crockpot. Add salsa, black beans, corn, bell pepper, chicken broth, rice, cumin, chili powder, garlic powder, salt, and pepper.
2. Mix: Stir all the ingredients together until well combined.
3. Cook: Cover and cook on low for 3-4 hours or until the chicken is cooked through and the rice is tender.
4. Shred Chicken: Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot and mix well.
