Basic muffins sweetened with bananas and peanut butter!

Ingredients

1 1/2 cups self rising flour
1/4 cup salted butter
1/2 to 3/4 cup Greek yogurt (flavor of your choice)
1 tablespoon sweetener of your choice (optional)
3/4 cup frozen blueberries
1 to 2 tablespoons milk or buttermilk (as needed)

Preheat oven to 400°F. Cut butter into flour until sand consistency. Mix in yogurt and sweetener (if using), being careful not to overwork the dough. It will be crumbly. Fold in the blueberries. Add milk, 1 tablespoon at a time, just until the dough comes together, but is not too sticky. Dump out on a lightly flowered surface and shape it into a 1 to one and a half inch thick square, pressing it together lightly. Cut from corner to corner to make four triangles. Place on a parchment line baking sheet. Brush tops with a little buttermilk or eggwash. Sprinkle sugar on top, if desired. Bake for 12 to 15 minutes or until golden brown. Allow to cool and enjoy!

1.5 cups self-rising flour
1/4 cup butter
1/2-3/4 cup Greek yogurt
3/4 cup frozen blueberries
1-2 Tbsp buttermilk or milk (as needed)
1 Tbsp sweetener of choice

Preheat oven to 400°F. Cut butter into flour until a sandy consistency. Mix in yogurt (and sweetener if using), being careful not to overwork the dough, it will be crumbly. Fold in the blueberries. Add milk 1 tablespoon at a time just until the dough comes together, but not too sticky. Dump out on a lightly floured surface and shape into a 1 to one and a half inch thick square, pressing it together to form the shape. Cut from corner to corner to make four triangles. Place on a parchment lined baking sheet. Brush tops with a little more buttermilk or egg wash. Sprinkle sugar on top if desired. Bake for 12 to 15 minutes or until golden Brown. Allow to cool and enjoy!
