Can’t have enough taco recipes. The veggie tacos are a weekly staple!
Habanero Crema Veggie Tacos 🌮
Ingredients:
- diced mushrooms
- diced onions
- 1/2 quartered onion
- one tomato
- 6-8 habanero peppers quartered
- chopped cilantro
- corn tortillas
- shredded cheese
- oil
- sour cream
- avocado
Seasonings
- taco seasoning
- salt
- pepper
- minced garlic
- oregano
1. In a pan roast the quartered onion, halved habanero peppers, and quartered tomato with a drizzle of oil. Keep moving them side to side until they start turning golden brown. Put aside and let that cool down.
2. Chop your mushrooms and onions. You can also add bell pepper if you’d like. In a pan, drizzle some oil and sauté your veggies. You can take the roasted veggies from 1. place them in a dish if you’d like to save dishes and use the same pan. Add the seasonings when the veggies are sautéing.
3. While the veggies are sautéing, blend up the roasted peppers, onions, and tomato. It will turn into an orange sauce. In a bowl mix a couple tsps of that mixture and several tbsps of sour cream & mix. This helps tame some of the heat of the habanero and makes for a good cream sauce with the tacos.
4. Assemble your tacos. Heat up each tortilla on a pan with some oil. Spread some of the habanero paste that you blended on each side of the tortilla. Add your veggie mix, add avocado slices/guacamole, cilantro, cheese, and finish off with the habanero cream sauce!
