Vibrant Greek Asparagus Salad with Olives
Ingredients:
1 lb fresh asparagus, blanched and halved
1 pint cherry tomatoes, halved
1 cucumber, sliced
1/2 red onion, thinly sliced
1/2 cup Kalamata olives, pitted
1/2 cup crumbled Feta cheese
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
Salt & black pepper to taste
Directions:
Blanch asparagus spears for 1-2 minutes, then cool in an ice bath. Pat dry.
In a large bowl, combine cooled asparagus, tomatoes, cucumber, onion, olives, and Feta.
In a small jar, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
Pour the dressing over the salad and toss gently to coat. Season with extra salt and pepper if needed.
Chill for at least 30 minutes before serving. Enjoy!
