Vibrant Greek Asparagus Salad with Olives

Ingredients:

1 lb fresh asparagus, blanched and halved

1 pint cherry tomatoes, halved

1 cucumber, sliced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives, pitted

1/2 cup crumbled Feta cheese

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt & black pepper to taste

Directions:

Blanch asparagus spears for 1-2 minutes, then cool in an ice bath. Pat dry.

In a large bowl, combine cooled asparagus, tomatoes, cucumber, onion, olives, and Feta.

In a small jar, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.

Pour the dressing over the salad and toss gently to coat. Season with extra salt and pepper if needed.

Chill for at least 30 minutes before serving. Enjoy!

Légumes Rôtis Rustiques au Four avec des Haricots Cannellini

Ingrédients :

2 tasses (cups) de haricots Cannellini (cuits et rincés)

Assortiment de légumes rustiques (carottes, poivrons, courgettes, choux de Bruxelles, petites pommes de terre)

3 cuillères à soupe d'huile d'olive

4 gousses d'ail, pelées et entières

1 cuillère à soupe de romarin frais, haché

1 cuillère à soupe de thym frais, haché

Sel et poivre noir, au goût

Un filet de bouillon de légumes (optionnel)

Jus de citron frais, pour servir

Étapes :

Préchauffez le four à 200°C (400°F).

Préparez et coupez les légumes en morceaux uniformes.

Sur une plaque de cuisson, mélangez les légumes, l'ail, le romarin et le thym avec l'huile d'olive. Assaisonnez de sel et poivre.

Étalez en une seule couche. Rôtissez pendant 20 minutes.

Ajoutez les haricots Cannellini à la plaque et mélangez délicatement. Ajoutez le bouillon si vous le souhaitez.

Spaghetti à l'ail et aux épinards

Ingrédients :

500g de spaghetti de haute qualité

1/2 tasse d'huile d'olive extra vierge

8 gousses d'ail, finement émincées

1/2 cuillère à café de flocons de piment rouge

250g de jeunes épinards frais, lavés

1/2 tasse de parmesan frais râpé

Sel marin et poivre noir moulu, au goût

1/4 tasse d'eau de cuisson des pâtes (réservée)

Préparation :

Faire cuire les spaghetti al dente dans de l'eau bouillante salée. Réserver 1/2 tasse d'eau de cuisson avant d'égoutter.

Faire chauffer l'huile d'olive à feu moyen-doux. Ajouter l'ail et le piment, cuire jusqu'à ce que l'ail soit parfumé, sans le brûler.

Ajouter les épinards dans la poêle, les faire tomber brièvement (1-2 minutes).

Ajouter les pâtes égouttées et l'eau de cuisson réservée dans la poêle. Mélanger vigoureusement pour créer une sauce.

Retirer du feu, incorporer le parmesan et servir chaud. Bon appétit !
