Chicken & Veggie Quesadillas with Creamy Spicy Sauce

Ingredients

* 2 chicken breasts, cut into bite-size pieces
* 1½ red bell peppers, sliced
* 1½ yellow bell peppers, sliced
* 2 red onions, sliced
* 8 oz mushrooms, sliced
* 1–2 tbsp vegetable oil
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp smoked red paprika
* 1 tbsp black pepper
* ½ tsp salt
* ½ tsp chili flakes
* 4 large flour tortillas
* 1½ cups shredded cheese

Creamy Spicy Sauce

* ¼ cup light mayonnaise
* 2–3 tbsp sweet chili sauce
* 2 tsp Sriracha

Instructions

1. Preheat your oven to 400°F.
2. Place the chicken, bell peppers, red onions, and mushrooms on a baking sheet. Drizzle with vegetable oil and season with garlic powder, onion powder, smoked paprika, black pepper, salt, and chili flakes. Toss everything together until well coated.
3. Bake for 20 minutes, or until the chicken is fully cooked and the vegetables are tender.
4. Meanwhile, make the sauce by mixing the light mayo, sweet chili sauce, and Sriracha until smooth and creamy.
5. Place a flour tortilla in a dry skillet over medium heat. Sprinkle shredded cheese over one half of the tortilla, then fold the other half over it.
6. Cook on both sides until lightly golden and the cheese is melted.
7. Open the quesadilla, add the baked chicken and veggie filling, fold it back together, and toast for 1 more minute.
8. Slice and serve with the creamy spicy sauce.

🥭 Mango Tiramisu

Looks fancy, but it’s actually so easy! A light, creamy, tropical dessert that’s perfect for sharing with family and friends. 💛

Ingredients

Mango Purée

* 2 ripe mangoes
* ¼ cup water

Cream

* 1 cup heavy whipping cream
* 8 oz mascarpone Vermont Creamery
* 8 oz cream cheese
* 5 tbsp powdered sugar

For the Layers

* 1 package Savoiardi ladyfingers

Instructions

1. Make the mango purée: Peel and dice the mangoes. Add them to a blender with ¼ cup water and blend until smooth.
2. Make the cream: Whip the heavy cream with powdered sugar until fluffy. Add the mascarpone and cream cheese and beat until smooth and creamy.
3. First layer: Quickly dip each ladyfinger into the mango purée and arrange them in a single layer in your dish.
4. Spread half of the cream evenly over the ladyfingers.
5. Add a second layer of dipped ladyfingers, then spread the remaining cream on top.
6. Pour the remaining mango purée over the top and gently spread it into an even layer.
7. Refrigerate for at least 1 hour, but for the best texture, chill overnight.

✨ Serve chilled and enjoy this creamy, tropical twist on classic tiramisu!

Crispy, savory, and packed with shrimp and crab flavor, these easy air-fryer bites are perfect for an appetizer, snack, or party table.

Ingredients

* Peeled and deveined shrimp — 1–1¼ lb
* Green onions, finely chopped — 1 oz
* Imitation crab sticks, very finely chopped — 3 sticks
* Grated cheese — 1/4 cup
* Sesame oil — 1 tsp
* Soy sauce — 1 tbsp
* Dried garlic — 1/2 tsp
* Smoked paprika — 1/2 tsp
* Freshly ground black pepper — 1/2 tsp
* Salt — to taste
* Rice paper — as needed
* Cooking oil spray — for the bites

Instructions

1. Prepare the filling
Very finely chop the shrimp. Add the finely chopped green onions, then the very finely chopped imitation crab sticks.

2. Add the rest
Add the cheese, sesame oil, soy sauce, dried garlic, smoked paprika, salt, and black pepper. Mix everything thoroughly until well combined.

3. Wrap
Dip each sheet of rice paper in water for a few seconds, just until flexible. Add the filling in a sausage-like strip, roll tightly, and cut into small bite-sized pieces.

4. Air fry
Arrange the bites in a single layer in the air-fryer basket. Lightly spray the bites with cooking oil before starting the air fryer. Cook at 390°F for 15–18 minutes, turning or shaking halfway through, until golden and crispy.

Tip: Don’t soak the rice paper for too long. A quick dip is enough — it will continue to soften as you work with it.

🧀 Creamy Chicken, Broccoli & Mozzarella Bake

Ingredients

* 10.6 oz (300 g) chicken fillet, cut into bite-size cubes
* 3.5 oz (100 g) broccoli, cut into small florets
* 3.5 oz (100 g) cherry tomatoes, halved
* 3.5 oz (100 g) mini mozzarella balls
* 3.5 oz (100 g) shredded cheese

For the Egg Mixture

* 3 large eggs
* 4.2 oz (120 g) heavy cream
* ½ tsp salt
* ½ tsp black pepper
* ½ tsp dried garlic
* 1 small bunch fresh dill, finely chopped

Instructions

1. Preheat the oven to 375°F (190°C).
2. Place the cubed chicken, broccoli, cherry tomatoes, and mini mozzarella balls into a baking dish.
3. Prepare the egg mixture: In a bowl, whisk together the eggs, heavy cream, salt, black pepper, dried garlic, and finely chopped fresh dill.
4. Pour the egg mixture evenly over the chicken and vegetables.
5. Sprinkle the shredded cheese over the top.
6. Bake for 35 minutes, or until the chicken is fully cooked and the top is golden and bubbly.
7. Let the casserole rest for 5 minutes before serving.

🍌 Cozy Chocolate Chip Banana Bread

A soft, moist banana bread filled with melty semi-sweet chocolate chips, topped with silky milk chocolate and crunchy pistachios. The perfect cozy homemade treat. 🤎

Ingredients

* 3 ripe bananas
* 2 large eggs
* 2 tbsp granulated sugar (30 g)
* ½ cup unsalted butter, melted (113 g / 1 stick)
* 1⅔ cups all-purpose flour (200 g)
* 1 tsp baking powder
* A pinch of salt
* ½ tsp Ground Vanilla

Made with Beyond Good Ground Vanilla — for that extra warm, cozy vanilla flavor that makes every bite feel like home. 🤎

* ¾ cup semi-sweet chocolate chips (150 g)

For the Chocolate Topping

* 3½ oz milk chocolate (100 g)
* 2 tbsp hot milk (30 ml)
* 2 tsp unsalted butter (10 g)
* Chopped pistachios, for topping

Instructions

1. Mash the bananas with a fork until they become a smooth purée.
2. Add the eggs, sugar, salt, and Ground Vanilla to the banana purée.
3. Sift the flour and baking powder into the banana mixture.
4. Add the melted butter and mix until smooth and well combined.
5. Add the semi-sweet chocolate chips and gently fold them into the batter.
6. Pour the batter into a greased or parchment-lined 9 × 5-inch loaf pan.
7. Bake at 350°F (180°C) for about 45 minutes. Check for doneness with a toothpick inserted into the center. It should come out clean or with a few moist crumbs.
8. Let the banana bread cool before adding the chocolate topping.

🍫 Chocolate Topping

1. Place the milk chocolate in a bowl.
2. Pour the hot milk over the chocolate and let it sit for about 1 minute.
3. Stir until the chocolate is completely smooth.
4. Add the butter and stir until melted and glossy.
5. Spread the chocolate topping over the cooled banana bread.
6. Sprinkle with chopped pistachios.

Spicy Salmon Rice Bowls with Cucumber Avocado Salad 🌶️🥑

Makes 4 servings

🐟 SALMON

* 1½ lbs salmon, cut into large cubes (680 g)
* 1 tbsp avocado oil (15 ml)
* ¼ cup low-sodium soy sauce (60 ml)
* 1 tsp smoked paprika (2 g)
* ½ tsp chili flakes (1 g)
* ½ tsp garlic powder (1.5 g)
* ½ tsp onion powder (1 g)
* ½ tsp black pepper (1 g)

🌶️ CREAMY SPICY SAUCE

* ¼ cup light mayo (60 g)
* 2–3 tbsp sweet chili sauce (30–45 g) Bachan's Japanese BBQ Sauce
* 2 tsp Sriracha (10 g)

🥒 CUCUMBER AVOCADO SALAD

* 4 cucumbers, sliced (about 300 g)
* 1 avocado, chopped (about 150 g)
* 1 bunch green onions, finely sliced (about 100 g)
* 2 tsp toasted sesame oil (10 ml)
* 2–3 tbsp rice vinegar (30–45 ml)
* 1 tbsp sesame seeds (9 g)
* ½ tsp kosher salt (3 g)

🍚 FOR SERVING

* 4–5 cups cooked white or jasmine rice (600–750 g)

METHOD

1. Prep the salmon:
Cut the salmon into large bite-sized cubes. Add the avocado oil, soy sauce, smoked paprika, chili flakes, garlic powder, onion powder, and black pepper. Toss until evenly coated.
2. Bake:
Spread the salmon in a single layer on a lined baking sheet. Bake at 425°F (220°C) for 10–12 minutes, until the salmon is cooked through and lightly caramelized around the edges.
3. Make the salad:
Combine the sliced cucumbers, avocado, and green onions. Add sesame oil, rice vinegar, sesame seeds, and kosher salt. Toss gently.
4. Make the sauce:
Mix the mayo, sweet chili sauce, and Sriracha until smooth and creamy.
5. Assemble:
Add cooked rice to each bowl. Arrange the salmon on one side and the cucumber avocado salad on the other. Drizzle generously with the creamy spicy sauce.

✨ Tip: Sprinkle with extra sesame seeds and green onions before serving!
