π Slow Cooker Porcupine Meatballs
A cozy Sunday potluck classic made with just a few simple ingredients. Tender beef meatballs packed with rice simmer slowly in a rich, savory sauce until everything is perfectly cooked.
Ingredients
* 1Β½ lb (680 g) ground beef
* Β½ cup uncooked long-grain white rice
* 1 can (15 oz / 425 g) tomato sauce
* 1 cup beef broth
* 1 tsp salt
* Β½ tsp black pepper
Instructions
1. In a large bowl, combine the ground beef, uncooked rice, salt, and black pepper.
2. Mix gently until everything is evenly combined.
3. Shape the mixture into 1Β½-inch meatballs.
4. Arrange the meatballs in a single layer in the slow cooker.
5. Pour the tomato sauce and beef broth over the meatballs.
6. Cover and cook on LOW for 5β6 hours or HIGH for 2Β½β3Β½ hours, until the beef is fully cooked and the rice is tender.
7. Carefully stir the sauce around the meatballs during the final 30 minutes.
8. Let the meatballs rest for 5 minutes, then spoon plenty of the savory sauce over them before serving.
